Freestyle Apple Tart

Reviewed: Oct. 12, 2009
My young kids thought the cream cheese was a little overpowering but it was a big hit with all of adults. This actually surprised me given the simplicity and use of so few ingredients. I think the combo of the cream cheese with the apples makes for a interesting flavor. Almost like it better than my current apple pie recipe. Super simple, looks pretty and not too sweet. I'll definitely make this at least a few more times this season.

Pizza Dough I

Reviewed: Jan. 23, 2009
Worked very well for a dough recipe that doesn't need to rise. It was definitely more of a thin crust and as is the dough (crust) itself isn't really spectacular. But it tasted good with the toppings we added and it saved time so we will definitely use it again for our family. I may try to take some of the other reviewers' advice on how to give the crust more flavor (with spices) and work with it before serving it to guests.

Mostaccioli with Spinach and Feta

Reviewed: Jan. 6, 2009
I thought that this recipe was pretty good. I added 14 oz of pasta but kept the sauce proportions mostly the same- maybe that is why I couldn't give this recipe 4 stars. Maybe it would've been better with more sauce. I was making this for my own family and a neighbor who had just had a baby so I kept wanting to add something at the end because it didn't seem quite right to me. In the end, I added a 1/4 c. of Colby Jack Cheese and 5 strips worth of chopped (cooked) turkey bacon. The last addition gave it some crunch and a little more flavor. I think I will make this again when I have more fresh spinach to use up.

French Toast Casserole

Reviewed: Jan. 3, 2009
My whole family loved this dish. My three kids gobbled this up in no time flat. I liked that I could throw it together and let it bake instead of having to flip individual french toast slices. I will definitely be making this again because it is so easy. We made no changes to the original recipe but I could imagine it would be good if I added chopped walnuts or dried fruit. And definitely serve it up with maple syrup!

Spinach and Cheese Stuffed Pasta Shells

Reviewed: Dec. 16, 2008
My family didn't really enjoy this the first night I served it. They said it tasted a little bland- thus lots of leftovers went into the fridge. However, the next day, we tried again for lunch and it was a big hit. I think that the time it spent sitting made a difference in the flavor. When I make it again, I will make it ahead of time.

Health Nut Blueberry Muffins

I could eat these all day and I make them a lot but the kids always request the "To Die For Blueberry Muffins." Big surprise: they prefer the less healthful option!

Migas II

Reviewed: Dec. 16, 2008
I loved this recipe because it reminded me of a dish my mother would make when I was little. However, my husband wasn't all that impressed- he thought it was too greasy. I'll make it again with less oil and more topping options.

Macaroni and Cheese V

Reviewed: Dec. 16, 2008
I had high hopes for this recipes but it just didn't go over very well with the family. Maybe we are too hung up on Kraft :) My kid's wished it was cheesier and didn't go for the bread crumbs. I know that this is a much more healthful option so I wish it had received a better reception.

Cream of Mushroom Soup

Reviewed: Dec. 16, 2008
This recipe was really flavorful. I let my kids help me prepare this one and they LOVED it even though it is like pulling teeth to get them to eat any kind of soup. I will say that I ended up using heavy cream instead of the half-and-half (yeah, I know). It was all that I had and while not the most healthy way to make this recipe, it sure tasted delcious!

To Die For Blueberry Muffins

Reviewed: Aug. 24, 2008
I made these for a rather large play date and they were a big hit. My own kids don't like the healthier recipe for blueberry muffins I usually use and almost wouldn't taste these but they are converts and now ask for this specific recipe all of the time. Thanks!

Black Beans and Rice

Reviewed: Aug. 12, 2008
I loved this recipe and the kids gobbled it up. My husband thought it was ok. So for that reason, I did it a second time and added a few things. I added about half a jar of pineapple chipotle salsa (mild) to the initial recipe and put out a bunch of toppings (avocado, cheese, sour cream and cilantro) for my family to add as they choose. This seemed to make it all the better. You can also make this recipe with brown rice, but it will take longer to cook.

Portobello Penne Pasta Casserole

Reviewed: Oct. 29, 2007
Good recipe. I made it for some family and friends. Only thing is that I ended up having to turn the oven off and leave the pasta in for about ten minutes because my guests were running late. That really dried the recipe out so make sure that you are ready to take it to the table straight from the oven. Otherwise, it has good taste.

My husband and I are crazy about portobellos and make this recipe all of the time. It tastes great with aioli sauce and melted provolone cheese on top. Would eat it every other night if possible!

Creamy Hot Cocoa

Reviewed: Oct. 29, 2007
This was really fun to make and my husband and I really enjoyed it. My kids would have been happy with the boxed version- they didn't think it was worth all of the trouble, so I will probably only make it for special occasions. But great taste!

Bob's Awesome Lasagna

Reviewed: Oct. 29, 2007
Great basic recipe. It was a big hit with my entire family. I only gave it four stars because more veggies would make it more of a healthy option. But no problem, I just added my own zucchini, yellow squash and mushroom to up the nutrient quotient and it turned out great. Thanks!

Whole Grain Waffles

Reviewed: Jan. 20, 2007
The first time, I tried to follow this recipe to a "T", but couldn't find the whole wheat pastry flour and just used whole wheat flour. The second time around, I followed the suggestions of the other reviewers and used a combo of whole wheat and white flour and I found that the waffles had a much better taste and texture. Now it is a family favorite! Thanks.
