Peanut Butter Cupcakes

Just pulled these out of the oven and let them cool a bit. I haven't added the frosting yet. The texture is a little thick and dry, but the flavor is good. I think it needs some tweaking.

Aunt Teen's Creamy Chocolate Fudge

This makes surprisingly wonderful fudge. I use the store grand generic chocolate chips, but you can't tell. Just make sure that you bring the liquid to a FULL BOIL before you start the five minutes. Otherwise, the fudge won't set correctly.

World's Best Lasagna

Yum! I don't know if it's the world's BEST, but it was pretty darn tasty. However, I think it needs some vegetables in it too. When I made it, I didn't add any because my guests were picky eaters. And I used fire-roasted tomatoes in the sauce, and left them diced for some good texture. I will be making this again.

Delicious Peanut Butter Cookies

YUM! These were soft and chewy. I took the advice of others and substituted butter for shortening, lowered the temp to 350 for 10-11 minutes, and also added peanut butter chips. I like mine a little underdone, and these were perfect!

Country-Style Ribs

Good, but of course I made some changes: 1. I used tomato sauce instead of ketchup (I didn't have enough). 2. I didn't have cloves or allspice, so I omitted them. Instead, I used a few pinches of Chinese 5-spice. 3. I used red wine vinegar instead of cider (again, no cider vinegar). 4. I added two tablespoons of Dijon mustard. 5. I added a 1T honey to the sauce. I normally don't make this many changes, but I think the results were outstanding! I'm very particular about my barbecue sauce.

Seven Layer Salad

I just love this salad. I've had many other salads like it that end up too sweet. I think this one is perfect. However, I always omit the peas and increase some of the other ingredients. It's pretty easy to just throw in whatever veggies you like.

Cookie Salad I

This makes such an easy and delicious salad! I like to add more fruit to make it more like a fruit salad. It's good even without the cookies. You can also experiment with different types of pudding. I've made this many times and it's always a big hit.

Best Big, Fat, Chewy Chocolate Chip Cookie

The first time I made these they just turned out ok. However, the next time we tried they were WONDERFUL!! I cut back on some of the chips, as I think they're a little too chocolate-y (which I never thought could be true). YUMMO!

Pork Roast With The World's Best Pork Loin Rub

Nice blend of sweet and savory. And I've even got some leftover rub for my next pork loin. I used 1/4 less sugar and more garlic to make it more to my taste. I will definitely use it again!

Bolognese Stuffed Bell Peppers

Wow! My partner and I thought these were the best stuffed peppers we'd ever eaten. I didn't have any pancetta, so I used bacon instead. Also, I substituted onions for the carrots and celery. As others reported, it was only enough to fill four green peppers, but that was fine with us! This one is DEFINITELY a keeper!!

Praline Sweet Potatoes

This will be the third year I've made these sweet potatoes. Every year my family demands that I bring them. However, I felt the potatoes were a little lacking. This year I added about some five spice powder and fresh ground nutmeg (just enough to add a little bit of flavor). I think it gives the potatoes a little extra something.

Creamy Banana Bread

A moist and creamy banana bread for sure! I took some suggestions of reviewers and added extra banana. I also substituted walnuts for pecans and ground them in the food processor to make a fine paste and swirled through half of the bread. YUM! I think I may tweak it a little more next time, but this was really a delicious, simple recipe.
