Savory Pork Roast

Made this with a 2.5 lb. loin, kept mixture same amounts (poultry seasoning instead of marjoram, and adding 2 T EVOO). Very tasty, cooked in less than an hour! I know, not a true rating since changed, but wanted to put the info. out there in case it can be of any help to others!

No Beans About It - Chili

this is great as is, but I use it as a base. Added bell peppers and use fresh tomatoes instead of canned, and salt. Used a little less vinegar, .5 lb. more meat, and splashes of worcestshire, liquid smoke, and cocoa powder.

Sweet and Mild Cooked Tomato Salsa

I think the outcome of this salsa can depend a lot on the type and size of the tomatoes used. Roma are the best for salsas, IMO. Mine were a tad on the small side, so I had to use about 10 of them to keep the salsa from tasting too vinegary. I only simmered mine for 2 hrs. and yummy!! I do puree the final product to hide the chopped onions from my kids, and only use 2 oz. of the diced chiles. Is good!

Love it. Used toasted sliced almonds and halved the sugar. Also didn't use sour cream, great w/out! Added slices of red onion, some parmesan, and voila!

Tomato Curry Chicken

Made some changes, like adding potatoes, using tomato puree (not the soup), and adding some more spices, I thought it was ok. My 7 y.o. LOVED it, rare for her to like anything w/ curry, so I have to give it a thumbs up!

SO good! And this was without bell pepper, kidney beans, and cilantro. I also didn't have canned tomatoes, so I roasted a few fresh ones, and pureed them. Very rich, complex flavors! Left out the flour.

Apple Spice Cake

These were to die for straight out of the oven! I did take suggestions and replaced half butter for applesauce, doubled the cinnamon, and used 1. white sugar, 1/2 c. brown sugar. Made 2 dozen muffins.

Spinach Basil Pesto

So very good. I didn't have kosher salt so I used a little less than 1/2 a teaspoon regular. And I used walnuts (not toasted) instead of pine nuts. SO DELICIOUS!!!!
