Creamed Spinach Casserole

Get yourself an inexpensive potato ricer. It's PERFECT for getting all of the excess water out of the thawed spinach. Also works great for shredded zucchini recipes. I used 3 eggs and only two TBS of butter along with crushed whole wheat crackers and a touch of parm for the topping. I did add some onion powder, garlic powder and a pinch of red pepper. I put it all in a 9" glass pie plate sprayed with pam. I cook it for 30minutes. Comes out perfect every time. I follow the South Beach diet and this is perfect for breakfast or as your side vegetable with dinner.

Sugar Snap Peas

I tried sugar snap peas in the past and I did NOT like them. I am attempting to eat more veggies so I thought I would try them again. They were wonderful and I didn't even have any thyme. Otherwise, made as is. I had to go to the store to buy more peas because they were so good. Good and simple.

Baked Fennel with Parmesan

I enjoy fennel but I wanted to try a new recipe. This was pretty good but I did add some dried onion and fresh black pepper. Creme fraiche was not available so I used greek yogurt. Maybe a little more parm next time. Thanks.

Zucchini Pancakes

These were so good. I am on the South Beach program and these were a nice break from my everyday options. I made them with WW flour and added a bit of garlic powder, cajun seasoning and fresh oreagno. I did wring the zucchini in a kitchen towel to remove excess moisture. I like them crispy. They were crispy outside and tender inside but not mushy. I loved how these turned out in both texture and flavor. Thank you.

Honey Baked Chicken II

Sauteed cubed chicken breast with 1/2 of the butter,double the curry and a pinch of cayenne pepper. I added some green pepper and served it with coconut rice. This stuff is phenomenal and so easy. Thank you!

Classic Macaroni Salad

Overall, very tasty but way too sweet. I used only 1/4 c. of sugar and it was still too sweet. The overall flavor and texture was quite good especially when I added some cubes of cheddar cheese and a bit of celery seeds.I also used cider vinegar vs. white. I will make it again, just with less sugar.

Apple Cole Slaw

I made this to bring to Mom's for Mother's day and it was very well received. I did cut the sugar to 1/4 cup, used only 1 green onion and added 1TBS. of apple cider vinegar.I also added a sprinkle of poppy seeds and 1/4 c. of dried cranberries. This will be a regular staple in my menu planning. Thank you.

Sweet Corn Cakes

Good stuff. It was a little sweet with 1/4C. of sugar. I also used 1/4C. of butter and that was perfect.Instead of frozen corn and water, I just pureed a can of corn in the blender. It was perfect, just like the restaurants. I cooked it for 50 minutes and let it rest for 10.Probably a good way to get a kid to eat veggies. Thank you.

Toll House Walnut Pie

Just what I was looking for. I used only 1/2 C. of butter and added 1 tsp. of vanilla extract and 1/4 C. of coconut. It was excellent. I did cover the entire pie with foil with 15 minutes of cooking time left so the top was not too brown. I loved this pie!!!

Coconut Almond Cookies

Very tasty. I did use 1-1/4C. of sugar and 1C. of coconut. I made them for my vet tech. I was asked for the recipe. I will make them again. Soft and tender. Baked for 12 minutes.

Chicken Wing Dip

Frosted Banana Bars

These are so good. I altered the recipe to 1C. brown sugar and 1.5C. all purpose flour plus 1/2C. Whole wheat flour. I baked it in a 9x13 glass pan for 28 minutes. When cooled, I just topped it with powdered sugar. It really does not need icing. It's perfect

Grilled Ginger-Peanut Pork Tenderloin

This was so good. I used teriyaki because I was out of soy and also added some crushed pepper to the mix. No additional salt was needed. I seared it on the stove top in a grill pan then moved it to the oven to finish cooking over a bed of some sliced onions. I would certainly make this again. The P.B was a nice addition.

Pumpkin Wheat Honey Muffins

These hit the spot. I used 1C. pumpkin and 2C. whole wheat flour and baked them for 22 minutes. Cinnamon was also added and I left out the raisins. They are so good! My friend said that they would be good with cream cheese icing but I was trying to keep it "healthy." Very moist and satisfying. Thank you!

Double Quick Dinner Rolls

Very good. In addition to the onion powder, I did add 1 tsp. of rosemary and 1/2 tsp. of dill. It's nice not to have to knead the dough. The texture was more like a heavier muffin than a light roll. I would make them again. It was a perfect compliment to the Round Steak Sauerbraten from this site.

Round Steak Sauerbraten

I made this last night for my BF. His response was "that was one of the best meals I have ever eaten." I served it over noodles with green beans and fresh rolls. I did adjust to 6 TBS Red Wine Vinegar, 3 TBS of Worces. 3 TBS Brown Sugar and 2 bay leaves. I cooked it in a slow cooker with two small onions and some mushrooms for 2 hours. It was FABULOUS!!!!

Buttery Soft Pretzels

I used only 1/4 c. Sugar and 4 c. of flour, two which were whole wheat. I decided to make them into 12 chunky sticks and served them with Wisconsin Native's Beer Cheese Soup from this site. They were excellent. Next time I'll try just all purpose flour. Thank you.
