Ultimate Maple Snickerdoodles
Awesome! My husband declared these "the best snickerdoodles ever." I didn't have maple sugar, so just used turbinado. I also used half whole wheat pastry flour and half white flour with great results. Next time I might add a little maple extract just for an added maple "oomph". But these are great as is. :)

Peach Coffee Cake II
This was good, but not great. If it hadn't take so long (it takes a while to slice peaches, and then you've got to wait the 45 minutes of baking) I would have rated it higher. But the effort/time to deliciousness ratio was too low for me to make this one again. It could be sweeter, and definitely needs some more spices - ginger, or nutmeg maybe? I don't know, but it's missing something.

Cajun Cabbage with Rice
Very tasty! We're vegetarian, so I substituted some veggie burger crumbles for the beef. I didn't have tomatoes with green chiles, so I used regular diced tomatoes and added a fresh minced jalepeno. I forgot to cover it for about the first half of baking, but it didn't seem to suffer too much. I will definitely make this again, it was soooo easy and filling. And a great way to use up some cabbage (one of those "what do I do with this?" vegetables for me).
