Old Fashioned Paradise Pumpkin Pie
WOW! This pie is amazing! It definitely beats the traditional pumpkin. I did put it in the fridge to let the 1st layer set a bit. I spooned the 2nd layer on and it didn't marble at all. It took a bit longer to bake (maybe 20 mins or so). I also doubled the streusal layer.

Cream Puff Cake
I did make changes to give this a 5. I think it's WONDERFUL as a pie rather than a cake. (It makes 2 pie shells) I've renamed it Eclair Pie. I did as others did and used the chocolate from the "Eclairs II" recipe and spread it on the crust of the pie. Don't forget to make sure all the lumps are out of the cream cheese and only add a little milk before adding the rest. I totally omitted the whipped cream only because I'm not too fond of it. Deliciously creamy Eclair Pie!

Old Fashioned Coconut Cream Pie
I've never had CC pie, but it's my mother-in-law's favorite, so I tried my hand at it. She said this was "the best Coconut Cream Pie she has EVER HAD". I was proud of myself (this is the 1st pie I have ever made from scratch) and so thankful for this recipe. I followed other reviewers advice and used 1 1/2 cups half-n-half and 1 1/2 cups canned coconut milk. I also used the 1/3 cup of cornstarch instead of flour and made my own whipped cream (1 c heavy cream, 1 tablespoon conf sugar, 1 tsp vanilla). I also used fresh coconut (from the freezer section) as recommended by another reviewer. Added toasted coconut to the top. Beautiful!
