Sausage Egg Casserole
HUGE HIT! Brought this to an overnight July 4th party. I was asked to bring it every year. I made it with lowfat evertyhing - cheese, egg beaters, smart balance butter, microwaved the sausage for a minute to get the fat out - they had no idea. Next time I'm using turkey sausage.

Lasagna Spirals
What a fabulous way to make lasagna! My husband is not a brocoli fan, so I used spinash on my first go. The second time I made it with beef. I cooked lean ground meat in a medium pan, drained the fat, and added the tomato sauce. I let that simmer while I cooked the noodles & put together the rolls. When the roles were done, I spread the meat sauce over the top and added a bit more cheese. The best part about this recipe is how easy it is to mind portions. Have 3 rolls instead of a 4*4 piece of lasagna.

Bourbon Pecan Chicken
After I took the chicken off of the heat, I poured the sauce over it right in the skillet. I covered it & let it sit for a while. I served the chicken & sauce over a bed of mashed sweet potatoes. It was unreal. My boyfriend has renamed this "Go in 60 Seconds Chicken".
