Robin's Quinoa with Mushrooms and Spinach
I really like quinoa, but thought the balsamic vinegar taste was a little strong. Didn't like it enough to try the recipe again.

Sweet and Sour Salad
Very easy and delicious! It makes ALOT of dressing so I didn't use all of it. Just an FYI - leftovers are not as good as the next day because the crispy noodles get soggy.
