Chinese Cabbage Salad I

One of my go to recipes for BBQs. I use the flavor packet from the Ramen noodles in the dressing - usually Beef flavor. Also, in lieu of nuts, I use a sprouted crispy mix which consists of lentils, peas, beans...very yummy! The crispy mix holds up better than nuts in leftovers and I also serve the toasted noodles on the side as a topping. Enjoy!

Grilled Marinated Shrimp

This was great! Someone mentioned Chardonay so I had a glass and forgot to add the tomato paste and it was still great. I used fresh oregano so I doubled the amount. Made this and served over forbidden rice for hubby's birthday along with a tomato/avocado/mozarella salad drizzled with balsamic reduction. Saved in My Recipes for future reference and I'll try to remember to add the tomato paste/sauce next time. Bon Appetite!

Veal Chop with Portabello Mushrooms

Easy and tasty. I can't believe someone called it "bland". I served with a side salad, baked sweet potato, sliced tomatoes and and cantaloupe with basil. This one is saved to my recipes for future reference.

Amaretto Cake

Easy and very tasty. We prefer desserts that are not over the top sweet and this fits the bill. Plus, I usually have all the ingredients on hand. I've made it many times and friends always ask for the recipe. Bon Appetite

Honey Baked Chicken II

Using boneless/skinless chicken thighs, this wonderful dish only baked for 40 minutes and the flavor was delightful. As always, I did use a brine on my chicken during the thawing process. My brine consisted of fresh chopped garlic, S/P, and 2-3 T honey and water. Per recommedations from others regarding the sauce, I modified by using only 1/4 c butter and 1/4 cup of honey. I used a dijon mustard and also added about 1/2 t of cayenne pepper for some zing. Bon Appetite!

Cheesy Potato Casserole

Easy and tasty recipe. I used frozen Potatoes O'Brien (onion & peppers included)and used one Cream of Chicken and one Cream of Mushroom soup and eliminated additional onion. I used crushed Ritz crackers and 1/2 cup of the shredded cheese for a topping. I served this with BBQ chicken and ribs and had requests for the recipe. Enjoy.

Baked French Toast

Easy and excellent. I've made it for brunch on several occasions and it is now requested. I made no changes to the recipe except to double the servings. It's also good the next day should you have leftovers. Enjoy

Ham and Wild Rice Quiche

Excellent leftover ham recipe. I also did not use the wild rice and I used a combo of Parmeasan and Cheddar cheese and it was great. I sprinkled some fresh chopped Italian parsley on top and used fresh sauted mushrooms. Will make this again for brunch as we enjoyed it for dinner tonight with a salad.
