My cooking triumphs
I have recently taken a few cooking classes at Viking in Franklin TN; 3 day Italian Basics and two Fish Cookery classes. These are much fun and I look forward to more classes in 2008. If you have cooking classes in your area, regardless of your level of expertise, I suggest trying them.

Veal Chop with Portabello Mushrooms
Easy and tasty. I can't believe someone called it "bland". I served with a side salad, baked sweet potato, sliced tomatoes and and cantaloupe with basil. This one is saved to my recipes for future reference.

Amaretto Cake
Easy and very tasty. We prefer desserts that are not over the top sweet and this fits the bill. Plus, I usually have all the ingredients on hand. I've made it many times and friends always ask for the recipe. Bon Appetite

Honey Baked Chicken II
Using boneless/skinless chicken thighs, this wonderful dish only baked for 40 minutes and the flavor was delightful. As always, I did use a brine on my chicken during the thawing process. My brine consisted of fresh chopped garlic, S/P, and 2-3 T honey and water. Per recommedations from others regarding the sauce, I modified by using only 1/4 c butter and 1/4 cup of honey. I used a dijon mustard and also added about 1/2 t of cayenne pepper for some zing. Bon Appetite!
