Pineapple Angel Food Cake II

For those having trouble with the cake collapsing in a 9x13 pan, before you pour the batter into your baking pan, invert four pint glasses (or any four identically sized glasses) on your cooling surface and balance the corners of cake pan on the glasses, adjusting until the pan is stable and balanced. Prepare the batter and bake according to the recipe. When done baking (no jiggle, top is browned and cracks feel dry) immediately invert the pan on your glasses and let cool completely. Problem solved! I made this cake for my diabetic grandmother's birthday and it was well received. I used an ungreased Hefty EZ foil pan (the disposable kind) and did not have any problems with the cake sticking. I couldn't find the 18 oz angel food cake mixed but used a 16 oz Betty Crocker angel food mix and it worked great. I iced the cake with sugar-free Cool-Whip and sprinkled it with a fruit confetti made from diced pineapple and diced strawberries. Will make again!

Lemon Garlic Hummus

Agreed that it needs some tahini but it's still good and very fast. I found I liked it more as part of a veggie wrap than a dip, but with a little work it could stand fine on it's own.

This was alright. I would have actually given it three stars except it was my error that took it down a notch. I found it to be a little too liquidy for my tastes but that will be easily fixed on the next round by not adding all of the milk or addining more potatoes. The flavor was fine but even better the second day.

Portobello Mushroom Pasta

Very good pasta dish. I was worried that it would taste strange as I had never used vinegar on pasta but it worked very well with this combination of vegetables, particularly the red bell peppers. I added some chopped onion and the red wine vinegar I used was garlic infused. If you have plain red wine vinegar, you might crush a couple cloves of garlic and let it sit in the vinegar for an hour or so before you use it.

Arrabbiata Sauce

Excellent sauce. I made it as written and it was fantastic. The next day I stirred in a little sour cream and discovered that it also works very well as a lightly-creamy sauce. Make sure that you use penne or a similar noodle. I was short on penne so I used what I had left and threw in some linguine to make up the difference. Due to the chunkiness of the sauce, it doesn't cling very well therefore it is unsuitable for a long, thin noodle. I will probably use fusilli the next time I make this.

Rosemary Ranch Chicken Kabobs

I have a love/hate relationship with rosemary so I was ready for a "meh" reaction, but this was really tasty. That might have something to do with the fact that I used dried rosemary in place of fresh, but I really enjoyed them and my fiance said it was a keeper. Thanks.

Cream of Cauliflower Soup II

Spruced Up Mashed Potatoes

I'm teetering between 3 and 4 stars. I think I was expecting more out of this but it tasted like your average mashed potato to me. The color from the carrot was nice and it is an excellent way to use up some veggies that are on their last fibrous legs. Will most likely make again when I need to clean up the veggie bin.

Delicious Rosemary Bread

Delicious and a great bread for a first time bread maker. I found the instructions about the third cup of flour a little confusing. You don't need to work in the entire cup if your dough is in good shape - I tried to do it just wouldn't accept any more after 2.5 cups. Anyway, I'm not that crazy about rosemary but this bread is delicious!

Famous Japanese Restaurant-Style Salad Dressing

I've made this twice now and I can't seem to get rid of the bitter aftertaste that it has. The dressing tastes great at first and then this strange bitter flavor takes over. Still trying to correct it because I really like it and want it to work for me.

Skillet Squash and Potatoes

Fantastic. I'm giving it the honorary (and imaginary) AR sixth star. I think what took it over the edge for me was letting the onion carmelize and letting the potatoes brown and crisp up a bit prior to adding the squash. I did add zucchini as well as yellow squash as that is what I had on hand, and sliced the onion instead of chopping it. Superb. Thanks!

I think this is a good jumping off point, but it didn't quite nail it for me. Maybe some more garlic, a little lemon juice and...maybe a couple of blended kalamata olives? I'll have to give that a try and report back!

Bottom Round Roast with Onion Gravy

My roast turned out dry so I think next time I will do this in the crockpot. My gravy wouldn't thicken until I added some cornstarch. I served with roasted brussel sprouts, and two recipes from this site: Mashed Potatoes with Horseradish and Candied Carrots. Cabernet made the meal. Thanks!

Mashed Potatoes with Horseradish

Very good! I added another spoonful of sour cream and another half tablespoon of horseradish but found it to be a little dry. I was out of milk so I added a little of the starchy water that I cooked the potatoes in (always reserve some water for this purpose!). It complimented my roast beautifully! No need for horseradish sauce with these potatoes.
