Double Layer Pumpkin Cheesecake-Low Fat Version
About this Cook
I am a stay at home mom with an 8 yr. old son and wonderful husband. I worked with adolescents for 16 yrs in group homes before staying home with my son. I have taught him many things about cooking, and we enjoy being in the kitchen together.
My favorite things to cook
I like to cook... crockpot recipes, breads, and bake low fat breads, muffins and more.
My favorite family cooking traditions
My favourite tradition is making a Christmas Strata every year for breakfast. It bakes while we open gifts, and smells great! I also like to make things (treats) for my sons' school for his birthdya, Halloween & Christmas parties!
My cooking triumphs
I am known for making decorative "Doll Cakes" on female children/adults birthdays. I also am told I make wonderful shortbread at Christmastime!
My cooking tragedies
I have no luck with making pie crust! The never-fail recipes...I FAIL!

Chicken Chipulos
I have made this recipe many times and received RAVES! I roll the tortillas and I add black olives to the mixture (as in the recipe I have). I am Canadian and I was visiting my cousin in Brainerd, Minn., when a neighbour of hers brought over this dish. (My cousin had had a brain tumor removed..fabulous neighbours helped her out). Anyhow, I just loved this and noticed the review below is from MN. :)

Frozen Pumpkin Pie
This pie was SO EASY to make...and tasted so GOOD!!! I made the crust in the evening and left it in the (baking stone) pie plate. The next day I just had to finish it...what a breeze, yet it looks and tastes like it would be diffiult to make! My 10 yr old son asked me never to make "traditional pumpkin pie" again...he really enjoyed it. It cut beautifully in my pampered cef pie plate. Thanks for a wonderful recipe!!!
