Slow-Cooker Posole
Loved it! Followed the recipe, but sliced the meat in medallion pieces rather than in chunks. I have 3 young ones and only one ate everything. The meat was tasty however, the sauce is what was too spicy for the other two kids. Served with fried plantains and will definitely be making this again.

Slow-Cooked Flank Steak
My family and I loved this recipe for its simplicity and taste. I did not have chili peppers so I used chipotle chile pepper spice, added chopped garlic cloves, used red wine vinegar, and used beef broth instead of water. I followed the advice of other reviewers and only cooked it for 3 1/2 hrs and the meat was perfect. It was even more flavorful the next day and we used it in wraps with rice.

Cheddar Beef Enchiladas
Easy to make and great tasting. Added onions and garlic to ground beef mixture, used canned black beans, and topped with sou cream. Kids loved it and husband and I added jarred jalapeno slices for extra kick.
