My favorite things to cook
Spit Barbecue!! I have a machine my Uncle Johnny made in the 1960's that will turn two, twelve foot long, Stainless steel bbq spits. I can cook up to 400 lbs. of meat at a time. I cook over mahogany coals and use a seasoning rub that was created by my Granddad almost 50 years ago! I do a lot of ribeyes, pork legs and turkeys, but whole lambs are my favorite. They are delicious and put on a great show when you're turning six of them at once.

Easy Pizza Sauce III
This is a top notch recipe!! I did add some basil, red pepper flakes and a can of tomato puree for texture and it is so much better than anything you can buy. I like to make it a day ahead, you'll find the flavors really blend well overnight.

Citrus Garlic Shrimp
Awesome recipe. I did add 2/3 cup of dry white wine and really enjoyed the added flavor. I'm cooking this recipe again tonight for the 2nd time in a month!!

Aunty Pasto's Seafood Lasagna
Great recipe!! I also substituted ricotta for cottage cheese. I also used crawfish tails, bay scallops as well as shrimp, it turned out awesome. I tried it as a special in my restaurant and sold 30 orders in two nights!!
