About this Cook
Happily married, full time working mom of two active kids! Really didn't start cooking until I was married..atleast things that were not in a box.:) We love entertaining so that has also been a great motivator.
My favorite things to cook
I do quick and easy during the week and try to make something special on the weekends..always from this site! My hubby and I enjoy cooking together and trying new recipes all the time..my daughter is now trying to get into the action too since she can reach the counter tops now. My son is the "taste tester.":)
My cooking triumphs
This past year I cooked both Thanksgiving dinner and Christmas dinner for my family and friends..and didn't burn a single thing!

Lets just say I don't do well with an open fire!

Slow Cooker Beef Stroganoff I
This was ok. I followed Jillian's recommendations, and although it turned out ok and was very easy to put together I probably will look for another recipe to try as well. I did, because of time, have to cook on high..will try again one day cooking all day and see if it is better!

Oven Baked BBQ Ribs
Made these last night..delicious! Did not alter sauce..was perfect. Covered ribs with foil and cooked 1 hour, added remainder of sauce, covered again cooked for another hour. Removed foil basted and left uncovered basting every 15 mins for 30 more mins. Finished them on the grill, basted them there too, for 15 mins to get a nice char. Were absolutely perfect!

Dinah's Baked Scallops
Made these last night and they were awesome! I added garlic to the butter mixture and I drizzled a bit too much on top..I couldn't resist! Next time I will restrain myself and just use it to dip them in while eating. I am planning on making these again using Panko crumbs as suggested by other viewers to add an extra crispiness! Definitely a keeper!
