Sweet and Tangy Slow Cooker Bar-B-Q Pork

Reviewed: Nov. 6, 2008
Yummy! I went a little light on the spicy stuff, and skipped the red pepper. I also added a bit more water, because it was going to be in the pot for a little more than 8 hours; this turned out to be unecessary, as the sauce was a little thin. Excellent flavor though, thanks for the recipe!

Balsamic Tortellini

Reviewed: Nov. 5, 2008
I cannot say enough good things about this. I have no idea what pancetta bacon tastes like, but regular bacon seems to work fine...I would give 20 stars if I could. I used Schwan's 6-Cheese tortellini and added the tiniest dash of garlic powder; everything else (bar the bacon) was as stated. Also it was super fast, I walked in the door and 35 minutes later I was sitting down with a plate! Awesome. Thank you so much for this wonderful recipe! :) UPDATE: I made this again for a friend, this time I added a chopped roma tomato and some corn. Great addition to make this a complete lunch, with a side of fresh baked bread.

Mmm, just like I remember. Wonderfully creamy and sweet; and a great way to use up my abundance of carrots! Thanks for sharing!

Herb Quick Bread

Reviewed: Nov. 3, 2008
I thought these were good. I was very generous with my seasonings, based on other reviews, and I doubled the egg (cut the recipe in half but used a whole egg). I made muffins and baked them for about 30 minutes. Really good with cream cheese on top!

Cinderella Pumpkin Bowl with Vegetables and Sausage

Reviewed: Nov. 3, 2008
This was sooo yummy. I'm just a little disappointed I couldn't get a better picture! I bought a real Cinderella pumpkin and it was gorgeous. Anyway. After 3 hours of the filled pumpkin being in the oven, I pulled it out to take a look, and the flesh was so soft that it cracked and fluid started leaking everywhere. I tested the filling and it wasn't quite cooked :( So, I thought, nothing for it; scoop it out and cook it some more. I put all the filling back in my big pot and simmered it for an additional 30 minutes or so. After all the filling came out of the pumpkin, though, it couldn't hold itself up anymore, and collapsed completely. I scooped up some flesh and added it to my pot, and saved the rest. So, next time, I don't think I will pre-bake the pumpkin, as it seemed unnecessary. I might also try lentils as a good sub for the brown rice. The only other thing I would change about this recipe is to double the meat; each bowl only had about 3 slices in it, and my man likes a little more meat than that. But, wow! Excellent recipe, thanks for sharing!

Cream Cheese Chocolate Chip Cookies

Reviewed: Nov. 2, 2008
These are awesome. Really rich and tasty. I'm glad I went to the store to get milk chocolate chips, though; semi-sweet would probably not have been as good. I flattened them a little before baking, and yes they do hold their exact shape! Thanks for a great recipe!

Pork Chops with Apples, Sweet Potatoes, and Sauerkraut

Reviewed: Oct. 19, 2008
This was a very flavorful dish, sweet and sour combined. The apples, sweet potatoes and sauerkraut joined together in taste which made it difficult to separate each without looking. But outside of that, very good. The pork was super tender and tasty. Thanks for a great recipe!

Sugar Cookie Icing

Reviewed: Oct. 19, 2008
This tasted great, and was a nice creamy white color. I used whipping cream instead of milk, and put it on some of our 'Best Ever Chocolate Cutout Cookies' from this site. Great combination. This was one of the easier icing recipes out there, but didn't taste like pure powdered sugar (like so many of them do!). The only change I made was subbing vanilla for the almond extract.

Lebanese-Style Tabouli

Reviewed: Oct. 19, 2008
I just kind of used the recipe as a base and eyeballed the amounts. This was really lemony, I added a tiny bit of sugar and a lot of salt to cut the sourness. However, tabouli is a great way to use up all the parsley I was blessed with, and this recipe has all the classic ingredients I remember.

Easy to work with and really yummy too. My five year old had a great time cutting them out. Thanks for a great recipe! The only thing I did different was to add a teaspoon of vanilla along with the egg.

Spinach and Tortellini Salad

Reviewed: Oct. 17, 2008
I thought this was more along the lines of 'cowgirl food' as Pioneer Woman would say...but my man complimented me on it extensively. I subbed fresh spinach, added a bunch of fresh parsley, and omitted the olives because we don't like them. Easy to make, thanks for a wonderful recipe!

Mock Lobster

Reviewed: Oct. 17, 2008
My man fell in love with me all over again. I only had boneless skinless thighs, but they soak up the marinade just fine. I've never cooked a marinade before, but I'm thinking this will be the new standard recipe I use. Takes more time, but worth it...and the butter was a wonderful (if sinful) touch. Works great on kebabs too!

Animal Crackers

Reviewed: Oct. 16, 2008
Wonderful. I used an extra teaspoon of honey and they were still not sweet at all; great treat for my 5-year-old, and easy to work with. I used cold butter, and for buttermilk I used skim milk with a bit of lime juice. My pan was ungreased and I had no problem with the cookies sticking. Fun easy treat! Thanks for the recipe!

Chicken Enchiladas with Creamy Green Chile Sauce

Reviewed: Oct. 8, 2008
From DBF; 'they were o'k.' I say, 'should I make them again?' he says, 'yeah make them again...' I guess they were pretty good, but probably not like a restaurant (he thinks if you pay someone to bring it to you it automatically tastes better!). I made this the day before and refrigerated until he got home, since I would be gone all weekend. Most of it was eaten come Monday, so it couldn't have been that bad. I used flour tortillas instead of corn, and fresh jalapenos from the garden. Other than that, all as stated.

Original Irish Cream

Excellent stuff. I used my best friend Jack, and whipping cream; followed the measurements exactly. The only change I made was to use Nesquick powder, since we don't keep 'chocolate syrup' in the house. Mmm. I barely had enough to share with guests!
