French Breakfast Muffins

Light and fluffy, I halved the recipe and made about 8 smallish muffins. Didn't have any leftovers so they must have been yummy! Didn't change a thing :)

Chicken Fettuccini Alfredo

Best comfort food ever! So nice and creamy. I used all whole milk and only had mozzarella cheese; portobello mushrooms were on sale and if you can, use them! Sooo tasty.

Great flavor. I halved the recipe and made two medium sized loaves. Think I overcooked it a tad because the crust was a little too thick; I've never sprayed my bread with water while cooking and I must have overdone it.

Pesto Mushroom Chicken

Great stuff! The only change I made was to sub pine nuts for the walnuts. Oh and one tablespoon of the oil in the pesto was walnut oil. :) No leftovers!

Heart's Delight

Awesome! I halved the recipe and did not do the pink heart thing :) Also subbed vanilla for almond flavoring. Cookie alone is great, nice light texture and not too sweet; frosting is wonderful. I think I will make this frosting for other cookies in the future; it has such a nice smooth texture, pretty creamy color, no funky powdered sugar taste. Definitely give these a try!

Pork Chops Stuffed with Smoked Gouda and Bacon

Pretty good! It was a big hit with my boyfriend's family. I changed the serving calculator to 8; I had four really thick, large boneless chops. I cut each one in half and they were the perfect size for a serving once stuffed with the filling. The filling! Everyone kept eating it out of the bowl before I could finish stuffing the chops! I did have some left over also, the plan is to make scrambled eggs for breakfast tomorrow and use up the extra stuffing on them. Mmm, can't wait!

Huge hit! Made this while visiting my boyfriend's family and they all loved it. The only change I made was from red onion to green; raw red onion is a little strong for my taste. I didn't really measure the dressing; topped with some cracked black pepper and voila!

Awesome! I don't really care for cooked cabbage...this was excellent though. I did saute a small yellow onion in the bacon grease before adding the cabbage, and I shredded a carrot in the mix for added color and nutrition. Yummy!

Slow Cooker Chicken Stroganoff

I followed the directions exactly. Came out so creamy and rich, even though I used Neufchatel cheese and low fat chicken soup. Directions didn't really say what to do with the juices in the pot; I left them in. Excellent comfort food for a busy day!

Chocolate Mint Candies Cookies

Very rich and tasty cookie! I didn't change anything except to use up some milk chocolate chips (about 3/4 cup) along with the semi-sweet. I had about 4 cookies that I didn't have Andes for, so I put some leftover Chocolate Powdered Sugar Frosting on them. 8 minutes in the oven gave me cookies that were still a teeny bit raw so 9 minutes was just perfect.

Decadent Pumpkin Muffins

Yum! I left out the cloves since I was feeling too lazy to grind them up. I halved the recipe (still made more than 12 muffins!), so for the 1/2 egg I just used a whole one and left out the water. No other changes and these taste great! My boyfriend put away about 5 for breakfast :) For extra yummies, I dipped some in melted butter and sprinkled with cinnamon sugar.

Tomato Spinach and Basil Soup

Great flavor, not so hot in the looks department--this was mostly my fault, just letting others know what not to do! I didn't have tomato puree, just petite diced; I was going to puree it myself in the food processor, but decided since the onions were in big chunks and I like chunky tomato soup, I would try it as is. So I dumped in the big can of diced tomatoes, and then noticed that the milk was a little curdled. I followed the recipe exactly, so this was a little disappointing. After adding the spinach and basil with the curdled milk it looked really nasty, and I got the bright idea to throw it all in the blender. It came out looking like baby poo :) I had friends over, and they all said the flavor was great, I just don't recommend blending the soup all together. Next time I will just deal with the milk chunks :) Wonderful flavor so thanks for the recipe, I'm going to keep trying on this one!

Fresh Rhubarb Pie

Rave reviews! Everyone loved it, if I didn't snag a piece at the beginning I would not have been able to try it :) Didn't change a thing, and pleased my dad who is very particular about his rhubarb pie. A keeper! The only recipe I will use, thanks for sharing!

Butt Stompin' Barbeque Sauce

I thought this was very tasty, but I got some strange reactions from others. I made a few changes; I didn't have red wine vinegar, so I used apple cider vinegar. I only used a couple dashes of hot pepper sauce, since I'm not into spicy; I also left out the habanero altogether. And I used Jack Daniels whiskey, which was quite noticeable. Maybe I will cook it longer next time, after adding the whiskey. I mixed it with shredded pork that had been cooking in root beer all day, made a tasty sandwich!

Sausage Spinach Bake

Wonderful flavor! I have never bought boxed stuffing mix in my life (I didn't know where to look for it at the grocery store!), and now that I know what it is I probably never will again. It came out pretty salty (which is ok with me), but it seemed like a lot of money for a little bag of bread cubes with seasoning. Next time I'm making my own. Anyway, the recipe is simple, easy to substitute fresh spinach. I didn't change anything else. Good the next day for a late breakfast!
