Perfect Turkey
If you have a frozen basted turkey, or a kosher turkey, yes, you should skip the brining step. You'll still get great results from cooking it upside down for most of the cooking time. I actually turn mine twice - 1/3 of the time with one thigh up, 1/3 with the other one up, 1/3 with the breast up. Silicone oven mitts are good for turning it over - be sure to have a helper hold the pan and rack.
I make some extra stock to use in the stuffing and gravy by cooking the neck and wings, with a few herbs and vegetables, in a pot on the stove.
