Slow-Cooker Chicken Tortilla Soup

As written, this recipe is 'ok'. It really needed some additions to make it a hit with us. We added black beans and more spices and heat. We loved it once we doctored it up.

Golden Pork Chops

YUM!! I seasoned the chops with garlic powder, onion powder, salt and pepper. I carmelized the onions, and put them and the mushrooms on top of the chops, then the mushroom soup, and a little shredded cheddar cheese on the top. I lowered the heat to 350 and didn't cover the chops. I cooked for a little over 40 minutes. The chops came out nice and moist and the gravy was great!! I served this on udon noodles. I will surely make this again!!

Haddock Bubbly Bake

I seasoned the fish with salt, pepper, garlic powder, onion powder. I put chopped broccoli, carmelized onions, and mushrooms on top of the fish, and then added the can of mushroom soup, and topped it all with the shredded cheese. This exceeded my husband's expectations. Very good!!

Roasted Pork Loin

Wow! I made a paste out of fresh garlic, fresh rosemary, fresh sage and some sea salt and put that into the pockets of the loin. Then I added some olive oil to the remaining paste and rubbed that over the loin. I put some potatoes and rings of onions in the same pot. I used a LeCreuset dutch oven with the cover on for 1 hour and turned the roast over and kept uncovered for an additional 30 minutes. I didn't have white wine, and I think because I had kept the cover on for the majority of the cooking time, there were natural juices in the pot, so we put those over our dinner. This was the best pork loin I have ever eaten.

Lighter Banana Muffins

This is a great recipe! I only had 2 small bananas on hand, so I halved the recipe, and needed to add a little milk because the batter was a touch dry. I also added a little vanilla and sprinkled the tops of the muffins with sugar and the muffins had a nice crispy top. YUM!!

Butter Chickpea Curry

This is really really yummy. The only thing I did differently was to add a teaspoon of cayenne. The curry sauce could be used for other dishes. My husband is a big meat eater, so I think I would add chicken and omit the potatoes, and serve it over rice.

Bacon Wrapped Pork Chops

I seasoned the pork and seared it and put cheddar cheese and bacon on for the last 10 minutes, but I overcooked the pork so it was a bit dry. This was very tasty though, and I will make it again, just not cook so long.

Pepperoncini Beef

What a simple dish!! Instead of the garlic I used a packet of italian dressing. The meat was so tender! This is how I intend to cook the meat next time I make tamales. Very good and so easy!

Spinach Veggie Casserole

This is a great base recipe. I think it would be very bland as is. I added extra garlic and salt and a couple tablespoons of fresh rosemary, chopped, into the onion mixture. I also added cheddar cheese and cream cheese into the cheese mixture. It was very very good!!

Chili Rellenos Casserole

I get Hatch Chili's from New Mexico, roast and freeze them every year, and I used them in this recipe. I only used 5 oz of evaporated milk (fat free), about half the cheese, and enchilada sauce. This is a great recipe!! We loved it and I will be making it again!!
