Toasted Pumpkin Seeds with Sugar and Spice

I just made these with cinnamon instead of the PPS. I doubled the recipe and OMG are they delish!! A bit on the sugary side so next time I will triple the seeds double everything else. That will be a btter ratio.

Chicken a la King I

I used 2 frozen chicken leg quarters. Boiled those (for about 1/2 hr+) while I prepared the rest of the ingredients. Used fresh mushrooms and did not miss having the liquid. Cut back on gr. pepper and added leftover corn on the cob. Served over mashed potatotes but will definitely use chow mein noodles next time. Thanks for the tip Tennismom, that is how I remember this meal as a child. No pimento handy so I just sprinkled Paprika over each bowl. Both kids LOVED this, even the gr pepper hater! Definite comfort food and makes you feel like a real cook even though it is easy to make.

Sour Cream Pork Chops

Instant classic at our house. Only change I made was spicing up the flour with some white pepper and paprika. My chops were on the thin side so 4.5 hours in the crockpot on low was plenty. Sauce could have been a bit thicker. Next time I will either remove some of the broth before adding the flour and sour cream or maybe use more flour. Served this with Peppridge Farm Stuffing and asparagus. Dinner hit the table 30 minutes after I hit the door. YAY!!!

Strawberry Spinach Salad I

The taste of the dressing is PERFECTION. Just be careful how much you use. I tripled the Salad ingredients and only doubled the dressing ingredients but still had WAY too much dressing. The first time I made this I took it to our church picnic (that's how much I trust allrecipe's ratings!!). When I retrieved my bowl to take it home, it was the only one completely empty!!

Green Bean Cheddar Chicken

I added brown rice which turned this into a complete meal in one casserole. I pre-cooked the brown rice and made it into a bottom layer. My other changes were cutting the chicken into serving size portions for each family member then just laying 2-3 strips of that pre-cooked bacon over each one. I decided not to use bread crumbs cuz it seemed like there was enough going on in that pan already!! Came out delish. Even the leftovers were yummy.

Chicken Puffs

YUM-mee!! I minced some leftover broccoli to add mostly for color but it gave a nice texture too. I froze the leftovers and they made handy lunchbox fare. Microwave, wrap in foil, then a sandwich baggie and it's good to go.

Pork Chops and Scalloped Potatoes

Good basic dinner. The roux/sauce tasted great before I poured it over the potatoes and it smelled WONderful while cooking but somehow it ended up tasting a little bland. Some garlic and minced onion next time.

Oven Brown Rice

O how I LOVE the helpful reviews on this site. I added almost 1/2 cup more rice to the recipe so that all the liquid would absorb. (Worked out great for leftovers!) It still took over an hour to finish cooking. I kept the dish covered for the first hour then uncovered for 15-20 until the last of the liquid was absorbed. Even with that short time being uncovered it got a little crunchy on top. I used 3/4 tsp garlic powder instead of 1 tsp garlic salt. I knew before I started that I would add steamed peas before serving but at the last second I noticed a handful of roasted peanuts and peanut dust in the bottom of a jar so I added those, too. The kids really liked this except one commented that it was "too buttery" so I'll cut back on that next time. I served it with a whole baked chicken. After dinner I pulled all the meat off the carcass, shredded it, added it to the leftover rice, froze the whole thing and now the sitter will be able to give the kids a home-made meal next week. Yippee!! all the way around.

Hungarian Noodle Side Dish

Very tasty. I added chunks of chicken that I sauted with some red pepper. I didn't have poppy seeds so I used caraway seeds, they added a great underlying flavor. Next time I will make a half batch or freeze half because this was a TON of food. Almost wouldn't fit in my crockpot.

Hearty Harvest and Ham Stew

What a great Fall dish! Potatoes definitely need to be cut large. I wanted to speed up cooking time so I cut the potatoes a bit smaller and ended up with mashed potato stew BUT the flavor was still fantastic. Love that caraway kick. A definite keeper, YUM!

Fettuccine Italiana

I love a recipe that has flexibility. I substituted shredded leftover turkey for the sausage and since I did not have mushrooms I used celery. I used a multicolor spiral pasta that my kids love and the whole thing came together very quickly. It did need a bit more seasoning but most likely I lost a little flavor because of not using the sausage. This one goes in the quick-easy-good-on-a-school-night file. *UPDATE* Made this with Turkey sausage this time and the flavor was perfect. 4.5 Stars!!

Anginettes

Easy to make. Add nice color to a tin of gift-cookies. I made the dough balls fairly small to keep them bite size so I had to almost triple the frosting amount. Next time I will use the juice of a WHOLE orange instead of just half becuse they came out a little on the bland side until they were frosted.

Layered Eggplant Hamburger Casserole

YAHOO!! I just sat through a dinner with my twin 3.5 year olds telling me "This is delicious" while shoveling eggplant into their mouths. I made a very simplified version of this recipe. The tomato etc that gets mixed with the ground beef sounded like spaghetti sauce to me so I just used Mids (A.K.A. "the best") jarred sauce. Like some other reviewers I skipped the onion layer. Assembly took 10 minutes! Cook time was just a little less than a Disney video on a rainy day. Thank you, Thank you, Thank you allrecipes.com_______ Too funny. It is 4 years later and I just came across this review from one of my first uses of this website. Guess what? My kids still ASK for this dish about once a month.
