Fresh Rhubarb Pie

I only used 1 c. of sugar and it was still really sweet. I'm a vegan, so I used Earth Balance instead of butter. It was really good!

Plain and Simple Sourdough Bread

This turned out pretty good - although I did have to add more flour. This was my first time using my starter and the bread definitely had that "sour" taste to it. I made the dough in the breadmaker and then shaped it and baked it in the oven.

Ciabatta Bread

This was really good! My dough wasn't all that sticky when it came out of the machine....more plastic-like than anything. It was even difficult to shape. But once baked this bread was amazing! I think next time I will make buns out of it.

Tofu 'Fish' Fillet Sandwiches

This was alright. It probably would have been better if I had fried the tofu, but a lot loss healthy. I didn't find it had much of a "fish" taste, so maybe next time I will increase the kelp? All in all I found it to be a bit bland. It was still edible and I liked it, but I would probably look for another recipe next time I make something similar.

Vegetarian Tortilla Stew

This was amazing! I couldn't find green enchilada sauce so I used some homemade red sauce I had in my freezer. I substituted black beans for the pinto beans, as I prefer them. I also used the entire can of diced tomatoes and doubled the chili powder. I used Yves Chick'n tenders for the meat substitute. I like my food spicy so I added some hot sauce and crushed red pepper to my bowl...I was sweating by the time I was done but man was it good!

Mock Tuna Salad

This stuff is amazing! I used vegannaise instead of mayonnaise, but other than that the recipe was the same. It's been a loooong time since I've eaten meat, but this reminds me more of salmon salad than tuna. Either way it's delicious.

Banana Smoothie I

After reading the other reviews, I cut the sugar to 1/2 tsp. I used a banana out of the freezer. It wasn't bad per se, but I don't think I would have it again. Truth be told, the raw egg kind of creeped me out while I was drinking it. It was all in my head, but I couldn't stop thinking about it.

Butternut Squash Bisque

This was really good! I'm only giving it 4 stars because I changed the recipe quite a bit. I omitted the butter. After I pureed the soup I thought it was a bit too sweet for me so I added some curry and ginger and a bit more salt. I also left out the cream - it was sooo yummy!

Curried Cumin Potatoes

These were pretty good! All I had on hand were small-ish baking potatoes so I used those. I also omitted the oil and used cooking spray instead to make it healthier. I agree with other reviewers that this dish was a little dry, but it was still a really nice sidedish.

Gnocchi I

These were pretty good. I used some left over boiled potatoes from the night before and mixed in about 1.5 cups of flour (until the dough felt right). They boiled really quickly...they started to float in about 3 min. I served these with a simple marinara sauce, but I think they would be amazing with a cream sauce.

Marinara Sauce

This was the best marinara sauce I have ever had! I left out the oil and used garlic from a jar. I also let it simmer for about 60 minutes. I served this over Gnocchi I from this site. I will definitely be making this again.

Spinach and Mushroom Quesadillas

These were soooo good! I did make some changes though based on what I had in the fridge. I used a combination of parmesan and mozzarella cheeses. Second, I used "regular" mushrooms as I did not have portobellos. I also added some fresh parsley because I wanted to use it up before it went bad in my fridge. It turned out tasting amazing and I served it was sour cream.

Seattle Cream Cheese Dogs

Mmmm! I put this on a veggie dog with some cream cheese...sooo good! I didn't heat it though, as I was in a hurry. I just ate it cold. Also, I didn't have any caraway seeds so I omitted those.

Spiced Sweet Roasted Red Pepper Hummus

This was pretty good - I liked the slight sweet taste of this hummus. I didn't have a jar of roasted red peppers so I roasted my own by broiling them until they were quite blistered.

Spelt Bread II
