Fish Tacos

VERY impressive! I love the sauce! I was hesistant @ first 'cause of the strange combo of spices, I'm so glad I tried it. I made it for my co-workers and it was a hit! I didn't add the capers although, looking back I would now. I didn't have plain yogurt so I substituted w/sour cream and I used fresh dill. VERY tasty indeed! Oh, and I used catfish. Yummy for the Tummy!

Creamy Caramel Flan

I meant to rate this in 11/06. I made this once b4 the holidays to see how easy it really was (and gain confidence) it was DEELISH!!! I followed the recipe exactly. Thanksgiving came around and I decided to make it for my co. annual T-giving potluck. I added 1/4 can of pumpkin and 1 tsp of pumpkin spices W-O-W what a HIT!!! I've been invited to a Luau and I'm thinking of adding crushed pineapple (maybe puree) for a Luau type taste! I will update.

Pizza Dough III

Yesterday I decided to take a shot at making my own pizza crust. I read many reviews and decided after an 8-5 job this would be my best bet. SO easy! I used regular flour. It came out great! I added 1 tsp garlic powder, 1 tsp thyme and 2 tsps of italian seasoning. I'm looking fwd to making again. Next time I'll do as others suggested and use a pizza stone (need to buy 1) and use corn meal at the bottom of pan. I'll also let it rise a bit longer and use 3/4 c of water for yeast mixture. I am so glad that although I didn't do some of these things IT was a HIT!!! Thank you!

Strawberry Angel Food Dessert

Yum! I made this last night. It was great. I did as others suggested and used 3/4 c sugar. I've also made something similar but w/less calories. I sliced strawberries sprinkled w/splenda set in fridge for an hr or so. After an hour layer angel food cake (torn pieces), strawberries, bananas, cool whip (or yogurt or low fat pudding). Very light and satisfying.

Caldo De Res (Beef Soup)

Good base. I make mine w/1-2 tsps of adobe spice, 1/2 tsp of oregano, lemon grass, and a whole lemon squeezed in and throw the rind in as well. I also always use a soup beef bone. I also let the spices & meat cook for about 30-45 minutes before adding the veggies.

Easy Mexican Chicken Bake

This would be a good dip type dish w/cubed chicken or casserole. It's not "Mexican-style" either it's Tex-Mex <-if you want to label it that. Just an FYI - I don't mean to be rude just clarifying. Thanks!

Chicken Fried Chicken

I was hesitant to try a fried chicken recipe calling for saltines/potato flakes but I sure am glad I tried it! I did double batter the chicken and it was absolutely delicious!!! I added additional dry spices as well. YUM! This will become a staple in our household thanks Cassie!

Lime Chicken Soft Tacos

I made this last night very tasty. I used 1/2 of the oregano and added a teaspoon of adobo seasoning. Yum! I had leftover chicken for a chicken salad YUM!

Mom's Stovetop Pork Ribs

Delicious! I would have never thought to boil ribs! I was afraid to try it but I'm so glad that I did! I didn't have soy and I didn't add as much sugar/flour and it still was still mouthwatering!

Broiled Tilapia Parmesan

Awesome! I made this and added a bit of thyme it was scrumptious. My 5 yr old and 15 month old devoured their servings!!! Will use again and again!
