Favorite Peanut Butter Cookies

These are the best! Crispy and chewy at the same time. Instead of margarine, I used 2 T butter, 4 T butter flavored shortening, and 6 T flax meal. Might substitute even more flax next time. Made half of the batch with bittersweet chocolate chips, but I think I prefer without the chocolate.

Beefy Lentil Vegetable Soup

I usually make lentil soup with polish sausage, so this was a nice change. The V8 juice in the fridge was a bit too old, so I used canned whole tomatoes instead. It froze extremely well, so be sure to make a huge batch!

Oranged Cranberry Sauce

This was a big hit! I skipped the cinnamon, but will try it with it next time. I added a few extra teaspoons of sugar at the end since it tasted a little too tart for our tastes. From now on, I'll make this for Thanksgiving dinner instead of the recipe on the back of the cranberry bag.

Classy Green Bean Casserole

I've never been a huge fan of the ol' Green Bean Casserole, but this was surprisingly good. I don't like things too salty, so I used half unsalted beans, plus reduced salt soup. Next time, I want to try it with fresh or frozen beans to make it even more classy ;). This is the newest addition to my Thanksgiving menu.

Poppy Seed Dressing II

This was very tasty. The only thing I changed was that I only used a little bit of onion. It makes a lot, so next time I'll cut the recipe in half. Served with Spinach Salad with Peaches and Pecans (recipe from this site). A great summer meal!

This was great! Made with the Poppy Seed Dressing II recipe from this site. We might even prefer this to the typical strawberry salad because the peaches are juicy. I'll keep this recipe for another time!

Hearty Harvest and Ham Stew

I loved this stew because the caraway seeds gave it a unique flavor. Definitely not the same old thing. The veggies were nice and soft for my infant to eat. Didn't change a thing.

Restaurant-Style Coleslaw I

I've made this at least 5 times this summer, without changing the recipe at all. I was never even a big coleslaw fan before. I love the tangy flavor. It's quick to throw together while the baby is napping. Be sure to let it sit in the fridge for at least a few hours before serving.

Cool Whipped Frosting

I didn't care for this as much as I'd hoped. We ate it, but I didn't think it had authentic flavor. I think the whipped topping made it taste a bit artificial. It was really fluffy though. Next time, I'm going to try it with fresh whipped cream, and I think it will be delicious.

Rick's Special Buttercream Frosting

This is excellent buttercream. Don't make this if you're watching your weight! Instead of all shortening, I use half unsalted butter and half butter flavored shortening. I don't think it would have nearly enough flavor with all plain shortening. I've never used it for decorating, but the consistency seems perfect for piping. Half of the recipe was just enough to ice a 9 inch cake (2 layers) since I don't like a ton of frosting.

Award Winning Soft Chocolate Chip Cookies

This recipe already has so many reviews, but I have to add my own. I like soft cookies, but I also love butter. Usually these two things don't go together, but this recipe makes it happen! It's a great change from the typical Toll House cookies. I make these when I happen to have vanilla pudding mix on hand.

Spaghetti Carbonara II

My husband and I loved this! I did make a few changes: Doubled quantity of cheese, used 1/3 cup white wine instead of 1/4, stirred cheese and eggs into pasta just after it was drained without returning it to the burner. Also used penne because I was out of spaghetti. Didn't need to add any additional salt. I will definitely make this again! How can you go wrong with bacon, eggs and pasta?

Buttermilk Pancakes II

This one deserves 10 stars. I've made these at least 5 times, and these are the only pancakes I'll make now. Great with some frozen blueberries mixed in. The fresh buttermilk gives it great flavor. I live at 6000 ft elevation, so I reduce the baking powder by 1/2 tsp and let the batter sit for a couple of minutes before making the pancakes.

Chickpea Curry

This is so delicious and EASY! I like it with chickpeas or with petite green peas. It's a good meal to make when we're tired of meat. I always reduce the amount of cayenne pepper to taste.
