About this Cook
Now that I'm staying at home with my son, I love trying new recipes. I love this site!
My favorite things to cook
Quick breads, salads, cookies, casseroles, pasta, soups, pizza.
My favorite family cooking traditions
Eggs Benedict every Christmas morning, after opening stockings -- Bunny molded cake for Easter (husband's family tradition that we've continued) -- Spritz cookies at Christmas time -- Seven vegetables for Thanksgiving.
My cooking tragedies
I once tried making my own "quick" version of Burgundy Beef after work. It turned out tough and bright purple from the wine. My husband still refers to the purple stew.

Favorite Peanut Butter Cookies
These are the best! Crispy and chewy at the same time. Instead of margarine, I used 2 T butter, 4 T butter flavored shortening, and 6 T flax meal. Might substitute even more flax next time. Made half of the batch with bittersweet chocolate chips, but I think I prefer without the chocolate.

Spinach and Orzo Salad
This recipe would be great for a potluck. Excellent flavor, and easy to make. I used a bit less onion than what was called for.

Beefy Lentil Vegetable Soup
I usually make lentil soup with polish sausage, so this was a nice change. The V8 juice in the fridge was a bit too old, so I used canned whole tomatoes instead. It froze extremely well, so be sure to make a huge batch!
