Green Tea Muffins

These are very good muffins! I realized too late that what I had was matcha leaves and not powder, but I did as a previous reviewer and just ground them. It doesn't get the nice color, unfortunately, but they are very pretty still. The walnuts add a LOT to this and definitely should be added. I also reduced the flour a little, substituted some butter for oil, and some maple syrup for sugar to try to make them moister. I made mini muffins-- 13-14 minutes was enough bake time.

Flavorful Tomato Soup

This is yummy! It makes regular condensed tomato soup a lot better. I like to add dried red pepper to make it a little spicy, and garnish with parmesan cheese~

Avocado-Shrimp Salad

This was very good on top of some romaine lettuce for a light dinner. I added some ponzu/citrus soy sauce(?) for extra flavor, which went very well. Next time I might grill the shrimp first and cut it into pieces so it's easier to eat. I will make this again.

Emerald Green Risotto

It was my first time making risotto, but this was very easy and really delicious! I put in whatever vegetables I had-- the crunchiness of the celery and green beans was wonderful! I didn't have arborio rice, so I just used the regular short grain Japanese rice that we have around, and that worked fine for me. I will definitely make this again.

Italian Portobello Sandwiches

Very nice light meal~ the onions and mushrooms (not a pepper fan) were really flavorful... I didn't even really need the basil-mayonnaise, next time I'll probably do without. Am making this again soon with the leftover mushrooms.

Flaky Crescent Mushroom Turnovers

Really good~ will definitely try again as an appetizer at a party or something. I added a clove of minced garlic to the mix and skipped the butter in favor of olive oil. Folding was a bit tricky for me, too (Pilsbury's crescent dough is probably not meant for squares..) but I just made them round and everything was great.

Best Guacamole

I added chopped cherry tomatoes to this and served at a party-- the guacamole was gone so fast! Best I've had yet. Lovely recipe, and so simple.

Pumpkin Chip Muffins

Not a pumpkin fan, but these were awesome. I halved the recipe, used less sugar, and replaced the oil with applesauce. They tasted great! Will definitely make again, probably for Thanksgiving.

Easy Vegetable Pot Pie

I used my own vegetables (boiled broccoli, potatoes, peas, celery) in lieu of canned, less thyme, and the 'Crust for Veggie Pot Pie' recipe instead of store pie crusts... it took a little longer, but it turned out well. Easy to make and yummy~
