About this Cook
For some reason, my mother never taught me to cook. She always told me I would have to marry a man who knew how to cook, which I did! We have been together almost 10 years and his cooking skill is finally starting to rub off on me. Cooking for us is a challenge because I am a vegetarian and he is not. But he enjoyes soy crumbles and burgers, so I usually go with those when meat is part of the dish! I have seven cats and a dog. Those are my children. I'm glad I don't have to worry about cooking to please kids!

Basic Chicken Salad
Wow. Being a vegetarian, I have missed chicken salad so much. I made this with Morningstar Farms fake chicken strips. It was absolutely fantastic! I lightly browned the strips in a pan (directions are on the bag), chopped them up, and put them in the fridge to cool. Then I mixed everything together. Soooo good.

Cream of Fresh Asparagus Soup II
Doubled the recipe. Didn't add any milk or sour cream (I had bought soy milk and vegan "sour cream" to add but decided against it because it had the perfect consistency). Added a bit more fresh lemon juice than the recipe called for. It was absolutely delicious!
