Roasted Vegetables
This made my house smell amazing! I omitted the white potatoes and added zucchini. I had to use regular vegetable oil instead of olive oil since I'm fasting, and I forgot that I ran out of balsamic vinegar. I seasoned the veggies with the fresh herbs, salt, pepper and several whole garlic cloves and it was really nice! The only thing was the sweet potatoes were a bit undercooked while the squash was a bit mushy. Next time I will chop the sweet potatoes into smaller pieces and the squash into bigger ones. Delicious, though, thanks!

Slow Cooker Chicken Taco Soup
This was pretty good, but it seemed to be lacking some depth, and that's probably because after adding all the other ingredients, my crockpot was filled to the brim and I couldn't add chicken broth or beer.. I used spicy mexican tomato sauce, spicy taco seasoning and chicken thighs instead of breasts. I also added a small can of chopped jalapenos, and forgot the onion. Still, it's an easy dish and very healthy.

Chicken Enchiladas II
These were really good with some modifications! I doubled the recipe except for the tortillas. I sprinkled the chicken with southwestern seasoning before sauteeing it, and then shredded the meat. I used one can of cream of mushroom, one can of Campbell's chicken verde, and added a small can of chopped jalapenos to the (doubled) sauce. Before placing the tortillas in the dish, I spread a little of the sauce on the bottom so it wouldn't stick. Last, I used whole wheat tortillas. Delicious and spicy!
