Balsamic Tortellini
I had not made this in a while and decided to serve it for guests last week. Once again - RAVE reviews. They are still asking for the recipe! I made a few changes - used turkey bacon (one guest is on a low-fat diet). Microwaved it and added to the onions after sauteing. Added @ 1/4 Cup of wine and reduced it some. Took skillet off burner and tossed tortellini with other ing. - adding balsamic vinegar at that time. Pour into big pasta bowl and add more vinegar and cheese and toss. Was great re-heated next day!!

Chipotle Shrimp
I have made this several times now and we thoroughly enjoyed it! I could only find whole chipotle peppers and found that if I take the seeds out before mincing, it's not quite as hot - which is how we like it. I too made it with chicken breast strips using non-stick spray for the chicken breasts and 1 Tbl. margerine for reduced fat. I sauted the chicken first and removed it to a warm platter. Then made the sauce, putting the chicken in the re-heat. When making the shrimp, I used pre-cooked, frozen thawed shrimp and put it in the sauce while it was simmering. Use the large, pre-cooked frozen shrimp (our store has been running 2 for 1 specials on bags of this). Delicious!! (also, I served the rice on the side)

Smucker's Chicken Salad with Wild Rice, Pecans, Grapes and Orange Dressing
I brought this to a baby shower last week and it was a BIG hit! Everyone wanted the recipe. I did make a few minor changes however. As another reviewer noted, the sauce was a little thick so I added the juice of the orange I used for the orange rind and it was a bit tart so I added a few teaspons of balsamic vinegar. I used Raspberry Wine Vinegar (Reese's) which I think has more flavor than regular Raspberry Vinegar. Also, I marinated the chicken breasts in a Balsamic Vinaigrette salad dressing (Wishbone, Kraft, etc.) for about an hour and cooked them on the grill. I used a rice that was a combination of wild, red, white and brown (Texmati). It comes in a plastic bottle/jar. It was very nice because it doesn't stick together. The marmalade was the secret ingredient that no one could figure out. Husbands liked it too!
