I am a wife of a hard working man and mom of 2 great kids. Outside the home, I am a medical assistant to a great lady podiatrist (or foot Dr.) We also have a Red lab named Jeb who is great at retrieving socks:) My husband says that he is a great pheasant hunter also, but I don't buy it!
My favorite things to cook
Desserts and breakfast items are my specialty. I enjoy decorating cakes and cookies. I do NOT consider myself a creative person, but when I get a blank cake in front of me, the ideas seem to flow onto the cake. Weird!
My favorite family cooking traditions
Thanksgiving, my husband fries a turkey and I make the side dishes. Fun and good! My mother in law makes a pumpkin pie. This last year she made a pie with just the filling in a pan because those people don't like the crust! I was like, really? Can I have some pie? You know I did not say that out loud, and I really love my MIL, but no crust, what's the point?!!
My cooking triumphs
Anytime when I try something new (not very often) and my family likes it. Cakes and desserts usually go over pretty good. I know this might sound cheesy, but Allrecipes has really helped me out with a lot of new recipes that my kids and hubby like.
My cooking tragedies
I have had many cake disasters. I made a great Spiderman cake for my nephew, and we had to take it on a road trip. (I am cheap and don't invest in cake boxes-would avoid many of my cake disasters!) The cake was in the back of the car, and a gift bag was carefully placed on top of the cake. (thrown in the back) Once we got to my sister's, we discovered the disaster. Spiderman now looked like he was nine months pregnant! This one is serious! I have been trying for 12 years, and still can't consistently make a good choc chip cookie. First time w/new recipe, great, next time, not so much. Day two, they taste like air! My 8 yr old daughter made some, and they WERE fabulous! Maybe her turn at the reigns! Crispy Orange Beef
A LOT of work, and time consuming. I have never liked frying meat so that did not help. (my mood) Good flavor. I will try the recipe again and use fresh orange juice instead of the concentrate. I just did not care for the intense tang from the concentrate. Strangely enough, I had a piece of the beef after it cooled, and it was toned down quite a bit and really tasty. I will try again, thanks!

Fried Rice Restaurant Style
Had to bring fried rice to a potluck at work, friend suggested that I just make the rice a roni cuz it's "so good." When I looked at the box, and saw no peas and carrots, I decided to try making my own. This recipe was just what I was looking for and really good! Made to recipe using the frozen peas and carrots-so easy that way. My friend said it was better than rice a roni :)

Marshmallow Fondant
Definately better thatn regular fondant in regards to taste. I have not ever worked with fondant and have wanted to try tot use it. This was easy to make. Followed the recipe and directions, tried to use my kitchen aid. It was having to work too hard, so I just finished the kneading by hand and it came together nicely. It was nice and smooth. Used it for a ghost cake, it looked cute! Definately worth trying again, thanks.
