About this Cook
I am a wife of a hard working man and mom of 2 great kids. Outside the home, I am a medical assistant. We also have a Red lab named Jeb who is great at retrieving socks:)
My favorite things to cook
Desserts and breakfast items are my specialty. I enjoy decorating cakes and have a small cake business. I like to cook on Sundays when I have extra time to cook a big meal.
My favorite family cooking traditions
Every other Thanksgiving, my husband fries a turkey and I make the side dishes. Fun and good! Christmas morning, we have monkey bread, sausage, eggs, potatoes. Then for Christmas dinner we have huge burgers with a variety of toppings, yummy!
My cooking triumphs
Anytime when I try something new and my family likes it. Cakes and desserts usually go over pretty good. Most recipes from this site work out well:)
My cooking tragedies
Some "cake disasters." I made hash browns from scratch for my hubby when we were newly married. He didn't like them and I cried for an hour! I definately learned to not be so sensitive about my cooking. If he-or we don't like it, try something else! Now I make hashbrowns from scratch and he likes them:)

Strawberry Muffins
Although they did not look the prettiest, they tasted pretty good! I used frozen berries that were not the greatest anyway and I think that affected the appearance. I added the brown sugar, cinnamon and vanilla as recommended by other reviewers. I sprinkled sugar on top before baking, would probably add a streusel topping next time.

Chicken with Chipotle
great recipe! used grilled chicken breast strips that finished cooking in the sauce. Served with extra sour cream, salsa and cheese on corn tortillas. I used 3 chipolte peppers and a little extra adobo sauce and got a perfect amount of heat and flavor for us! Addictive!!!!!!

Shrimp Scampi II
Really good. We grilled the shrimp, made the sauce and baked the shrimp for about 10 minutes in the sauce. I did have to thicken the sauce a little with cornstarch, I think I was just impatient with reducing the liquid. Thanks for a new staple recipe!
