Hand Held Hashbrown Casseroles

We loved this! I did double the eggs and cheese...8 eggs and 2 cups of cheese. Omitted the butter and ham. Used frozen diced peppers and added to the sausage along with a Tbs of dried minced onion. The bob evans sausage cooked up really lean so I didn't need to drain it...they were just moist enough with out the added butter. Made 1/2 in muffin cups and 1/2 in mini muffin cups - filled the cups to the top. Our guests asked for the recipe! This will be my go to breakfast for when we have house guests!

Beef Noodle Shepherd's Pie

My husband was really skeptical, this is not real shepherds pie, but he loved it. I halved the recipe for two but needed to add a little more water to cook the macaroni. I used homemade onion soup mix from this site (easy to half) and also added a little milk and cornstarch to thicken it up before baking it. I made homemade mashed potato's using 3 and it all fit really well in my small round corningware dish. Topped with a bit of cheese too. NO LEFT OVERS :)

Cheesy Ranch Potato Bake

Love it! I use about 1/2 stick of butter and I don't add it until I add the cheese and dressing. I use kraft dressing and seasoned salt instead of regular salt. The potatoes are super soft after 1 hour, and I cube them 1/2 inch or so. I top with a bit of cheese and broil to brown. YUMMY!!

Flank Steak with Avocado Salsa

Great recipe. I made it exactly as written and everyone enjoyed it. Next time though, I'll 1/2 the cinnamon and the lime juice in the salsa (I used fresh lime and it was a bit strong).

Kale Chips

Holy awesome! I had the oven temp at 350 and my small pizza sized tray was done in 5 min. I skipped the vinegar and just oiled and garlic salted them. They actually crunch! YUMMY!!!

Sausage Pasta

Love this recipe!! 5 ingredients and tastes gourmet. I halved the cheese as others did and used a can of well drained diced tomatoes...and I added a little garlic just because. Served with garlic bread and salad - yum!!!

Melt-In-Your-Mouth Meat Loaf

Mouth-Watering Stuffed Mushrooms

Enough filling for two cartons of mushrooms. Sprinkled with seasoned salt before broiling for 10min on low at home...finished/reheated in the oven at the party we took them too. They were gone in less than 5 min!!

Blue Cheese Surprise

Love the tarragon with the blue cheese burgers! I think I used a bit more than the recipe calles for because I scaled down to two and prob used 1/2 tsp. I used dried parsley, wish I'd had the fresh.

Mexican Chicken I

Really easy and good. I halved it and baked it covered at 400 for 1 hr. The chicken was tender enough to shred if I'd wanted to. I may try to combine with my mexican rice recipe to make a one dish casserole.

World's Best Lasagna

Made it exactly as written except I soaked the noodles instead of boiling them first. I made 4 layers and it was a tad bit dry. Tasted great but next time I'll make more sauce for when it served or I'll cut the noodles back to 3 layers. I'll only use this recipe EVER from now on.

Abby's Chicken Rollatini

Really good and easy! I didn't pound the breasts I butterflied them and then rolled them up top to bottom. I used jarred minced garlic with italian spices, about 1/2 tsp spread over each breast (not as strong as fresh). Provolone instead of mozz, will try it with the fresh mozz next time for sure...and sherry instead of white wine. SO good!

Easy Chicken Enchilada Crescent Bake

This tasted awesome and was sooo easy! I didn't even change a thing. Each enchilada uses 2 regular crescents with their seams put together. I halved the recipe for 4 and made it in my small corningware oval dish, it baked up nice and puffy, filled the whole dish when done. You HAVE to try the 10 min enchilada sauce recipe from this site - it was sooo good in this dish!! I served it with mexican rice II also from this site. I will make this often because its so easy.

Mediterranean Stuffed Chicken

I used minced garlic with italian seasoning instead of the spices and stuffed in a slit in the side of the chicken..broiled for a few min at the end to brown the top.
