Aunt Millie's Broccoli Casserole

This was very good, I made with brocolli and cauliflower. Cut back to 1/2 tsp salt and 1 tsp pepper and add 1/2 tsp each of garlic and onion powder plus several good shakes of tabasco - just our preference for seasoning. I still felt like it was missing something so I sauted 1/2 of a chopped onion and added that. Used 1/2 american cheese slices and half sharp chedder. I needed to add 1/4 cup of milk to get everything to combine - zapped it all in the mircrowave right in the casserole dish while the brocolli was steaming. Topped with crushed cheese crackers because thats all I had. I will use this modified version from now on - it was really good!!

Impossible Pumpkin Pie

Really good! I forgot to reduce the evaporated milk, I added the full can...so I added more pumpkin - ended up using a large can. It was really really good! I used my spring form pan and it was firm and beautiful when served on a platter with whipped cream on the side.

Mexican Rice II

Love it, followed it exactly and it's mild and tender, I did saute sliced onion and also green pepper first then added the rice. Next time I'll try using taco seasoning in place of the garlic salt.

Chicken with Bouillon

I used chicken soup base (lower in sodium) and still cut back a bit because I used salted butter. It was tasty and I poored the butter mixture over plain white rice. I'll probably make it again but tweak it a bit.

Rosemary Biscuits

So fast and so good, I can't believe there are only 4 ingredients! Using my stand mixer, these were on the table in the same time it took to boil the water and cook my pasta...amazing. Next time (tomorrow) I'm going to try fresh garlic.

Onion Chicken in Balsamic Sauce

I made this exactly as written (except using 3 breasts instead of legs) and it tastes very good as is! My sauce only thickened slightly before I ran out of time and had to put it in the oven, it still tasted wonderful over white rice, and the chicken came out flavorful too. I will make this again and next time I may cut back on the sauce including onion and sun dried tomatoes. I had a ton left over and ended up throwing it out. That should shorten the thickening time too.

Carrie's Artichoke and Sun-dried Tomato Pasta

Yum! I made it almost as written except I didn't have a fresh tomato so I added a fully drained can of dices tomatoes after I took the sauce off the heat (did not cook them). Oh and I used cooking sherry as my wine. I loved it but my husband didn't, he just ate the pasta. I will make it again but add grilled chicken so it will be a side dish for him. Thanks!

Grilled Tri-Tip with Oregon Herb Rub

Really really good! I halved the salt and used garlic powder and celery seed as suggested instead. I know the salt is a tenderizer but I'm pregnant and watching sodium. Eventually I'll try it will all the salt. Next time I will use celery salt because the celery was prominant using seeds - it tasted great but thats probably not how its supposed to taste. My tri-tip steaks from Costco were awesome! Saved half the rub and added some brown sugar as suggested by another and used it on a tenderloin filet later and I couldn't really tell the difference but my husband said he liked it better...so I'll add brown sugar from now on. Thanks for a great alternative to marinades!

Cracked Sugar Cookies I

Sweet and Sour Dipping Sauce

Way too much vinegar, I had to add more sugar and more ketchup...I used canned juice maybe that was why. If I try again I'll add the vinegar by tbs to taste.

Chewy Chocolate Chip Oatmeal Cookies

Awesome cookies! I followed the others advice and cut salt to 1/2 tsp and increased baking soda to 1 tsp. Also used 1/4 C extra flour. Did not chill first, but did keep the batter in the fridge while each sheet was in the oven. They can out high and didn't spread at all!

Rosemary Au Gratin Potatoes

SOO GOOD! This will be my go to potato casserole from now on. My preferences: I wanted larger cubes of taters instead of slices so I preboiled them whole and skinned and chopped them before adding the sauce. In total I used about 3/4 C of shredded parm, added 1/2 C to the sauce (yum!) and sprinkled about 1/4 C on top. I used seasoned salt instead of regular (for color) so I increased it to 1.5 tsp plus I sprinkled some on top for more color. I didn't add the cheese to the top until after baking for 45 min covered which was good because I was able to blot off some of the oil that had risen to the top first. I then put back in the oven on broil for 10 min to melt the cheese and brown the top. Was really good! Next time I may use 2 cloves of garlic since I love it. Thanks for a great recipe without canned soup!!!

Reduced Fat Yogurt Ranch Salad Dressing

This was pretty good. After it sat for an hour I thought it needed a little something so I added 1 tbs of lemon juice. My onion powder is new so it may be extra potent...next time I'll cut back on the onion or leave it out all together. Thanks for a great low cal recipe!

Lime Chicken Soft Tacos

Great flavor! I too used fresh cilantro instead of oregano and I added a bit of cumin. I made this in the crockpot starting with frozen breasts and it was easy and very tasty. At first I thought the lime was a bit strong due to the slow cooking but once you make the taco's its just right. I cheated on the other seasonings by using 2 tsp of canadian steak seasoning which is garlic, onion, salt and pepper, so the same resulting flavor.

Spicy Chicken and Cilantro Wontons

I didn't really care for these. The texture was too mushy for the filling and too much cilantro...and I love cilantro. I think it may be better with diced ingredients and maybe breast meat would have made a difference.

Old Time Chicken Divan

Fantastic served over white rice! I used half & half (stopped buying heavy cream about 10 lbs ago haha) and added a dash of garlic powder. My sauce got too thick very quickly, I think I had the heat too high, I turned it down added a bit more broth and it was fine. I was in a hurry and didn't bake the dish. I just layered steaming hot rice, cold chicken (leftover rotisserie), the hot sauce, fully steamed fresh broccoli and more sauce in individual bowls and covered them for a min to let the temp even out before serving. Don't skip the sherry, thats what makes this SOO GOOD!

Chicken Spaghetti Casserole I

I swapped out a few ingredients based on what I had, using feta instead of cheddar and red and orange peppers instead of pimento's and green. I used the same amounts of everything though. I also added a small jar of chopped artichokes with a few tbs of the liquid. I had hoped that the liquid in the artichokes would help it stay moist since others commented that it was dry. It wasn't enough, because after baking for 30 min covered the pasta had absorbed all the liquids and it was way too thick. I will try again, the taste was wonderful so next time I'll fill the empty soup can with the wine and top it off full with chicken broth (1 full can of liquid) instead of adding a whole 2nd can of soup as others did. I'll probably add more of the veggies next time too.

Tina's Shortbread Chocolate Chip Cookies

Whats not to love about shortbread and chocolate! Very easy recipe and they baked up perfectly. I added a little vanilla. Next time I'll try the mini chips and cut them back a bit because the shortbread is soo good I don't think it needs all the chocolate.
