President Ford's Braised Eye Round Steak

I adjusted the recipe to make four servings since it is just me and my boyfriend. I also didn't have beef consomme on hand, or beef bullion so I used worcestershire sauce mixed with an australian shiraz. It was really good. My gravy got super thick and the boyfriend didn't add salt. He liked it and when you live with a man that raises beef for a living that's saying something. I think next time though, I'd make more sauce. The adjusted recipe called for 2/3 cup of wine and I ended up adding at least a cup of wine. I was also short thyme so I used basil instead. It was really very good. It'll definitely go on the menu again!

Bob's Stuffed Banana Peppers

I followed this recipe to the letter, save for the sausage part. I don't like Italian sausage (no offense to Bob!) so I used Jimmy Dean Hot sausage instead. It turned out so great! Banana peppers are one of my favorite kind of peppers and this was just, lovely!

Beef Spinach Hot Dish

I'm only giving this recipe 3 stars, as it's missing something. I'm just not altogether sure what. I found that mine didn't bake up like a casserole, which is what I thought it would be. I think that next time, I might make it with a cheddar or colby jack cheese, and add rice and some extra water to it before I put it in the oven. I did use fresh spinach instead of frozen. It was good. My boyfriend loved it.

Shrimp in Sherry Cream Sauce

I made lots of changes to this recipe. I didn't use the microwave, and eliminated the green onions and cayenne, though they'd be fabulous. I used baby bella mushrooms- about a cup and used roughly 4 tbs butter in a saucepan, and sauted two garlic cloves, the mushrooms and 1/4 cup of onions in it. Then I added 1/2 cup of sherry. Let that simmer and then added the shrimp. I cooked the shrimp for a couple minutes, removed it, and then added about 1/4 cup of flower and 1/2cup of milk. I think next time I cook it I'll used cornstarch instead. I had to add a bit of salt but it was very tasty. I also served it over instant rice.
