Irish Soda Bread in a Skillet
Simple and yummy. My tweaks: raisins and 1/4 c. sugar. I also let the vinegar take over the milk overnight and it made a thick buttermilk which really moistened the bread. I served for breakfast on St. Pat's day with cinnamon butter.

Microwave Oven Peanut Brittle
Unbelievably easy and delicious. Made this for my husband's staff party and people were literally fighting over the last piece! I live in a high humidity area (Florida)and it still set beautifully. For those folks who find it chewy, make sure you use real butter. No substitutions. Margarine will give you goo.

Creme Brulee French Toast
This is a very "custard-y" variation, hence the name. So, it turns out a bit different than you may expect. That said, it is easy and delicious. It requires little prep and makes for an indulgent breakfast for houseguests. But be forewarned, kids can think this looks a bit scary.
