Chocolate Mint Cookies I

Oh, my! These are unbelievably tasty! Per others suggestions, I also added about 1 tsp of mint to the dough just before I added the eggs. Rather than 1/2 mint per cookie, I used a whole mint per cookie; just laid it on top as soon as the cookies came out of the oven, let it melt for a minute or two and then smoothed it out with my knife. I substituted milk chocolate chips for half of the semisweet chips, and they were great! Thanks for a fabulous cookie recipe!!!

Quick and Almost-Professional Buttercream Icing

Love this icing! The best go-to icing recipe and tastes WAY better than the canned variety. I often add 1/2 t of lemon extract if I am using it on a citrus (orange or lemon), vanilla or berry flavored cake. Thank you!!

Jicama Appetizer

Fabuloso! I used to eat this all the time when I was a student in Mexico. You can use lemon juice if you don't have fresh lime juice, although lime is better to me.

Sarge's EZ Pulled Pork BBQ

Gut-wrenchingly DELICIOUS! My husband declared this better than Dicks Bodacious BBQ! Super easy in the crock pot. Reviewer kbresler was right on- I followed her suggestions. 1)rub the roast with garlic salt and pepper. 2) I put in frozen chopped onion (a handful) to float in the broth. Didn't spear the roast with garlic and did use half beef broth/half veggie broth. It was still perfect. I cooked it on high for five hours and then three hours at low. Drained the broth and onions out, scraped off the fat and added a bottle of Sweet Baby Rays' Sweet and Spicy BBQ Sauce! Perfection. Thank you!

Blueberry Zucchini Bread

Excellent! To lighten it up, I used all whole wheat flour, 3 egg whites (no yolks), unsweetened applesauce instead of oil, 1 and 1/2 c splenda along with 2T Splenda brown sugar blend instead of sugar. Added 2 T almond meal (Trader Joes) and 1/2 of a very ripe banana mashed. Baked 12 muffins for 26 minutes. Delicious!!!!

Marinated Scallops Wrapped in Bacon

I loved these! Made them for Mother's Day and they were a hit. We cooked them on skewers on the grill. Delicious! Don't forget to soak wooden skewers in water prior to grilling (we soaked ours for about 1/2 hour).

Mouse's Macaroni and Cheese

Great recipe! My husband went for thirds and told me to give it 5 stars! I added a dash of garlic salt and onion powder to the mix. Used shredded cheese (Mexican)for the cheddar, and then crushed goldfish crackers on top for extra cheesy taste. The mustard powder gives it a wonderful flavor. I accidentally left out the bread crumbs but they were not needed. It was perfect anyway. One of the best mac and cheese recipes ever.

Deluxe Mashed Potatoes

Just about perfect as is -- not at all bland. I added a dash of garlic powder but otherwise followed the recipe as is. It was so good my husband went back for another heaping helping! Used store bought already prepared mashed potatos since I had them on hand (1 pkg of Bob Evans brand), and it saved a bunch of time and dirty pans..!

Glazed Meatloaf I

Really good but a bit blander than I like. The 2nd time around I swapped out the bread for 1c seasoned bread crumbs, swapped the egg for cheese and chive egg substitute, swapped 1/2 of the ground beef for ground turkey (to make it a bit healthier) and added a dash of garlic powder. The glaze should be doubled but is absolutely scrumptious! Give this a try -- it is tasty!!! Thanks for a wonderful recipe.

Chicken Noodle Soup

Great recipe! I cut the recipe in half and added one packet of vegetable broth seasoning and another 1/2 cup water. Loved it! My mother-in-law who is nursing a cold called to say she thought is was great medicine for her - she really liked it also!

French Toast Corners

I used a whole grain cinnamon raisin bread and egg beaters to make it more healthy and we LOVED it. Topped with sugar free syrup and turkey sausage on the side it is one of my favorite low cal breakfasts! Or use the fully loaded ingredients for a real treat!

Chicken Pot Pie I

Per other reviews, I added garlic powder, celery salt and dried minced onion to the mixture along with a sprinking of parmesan cheese across the top of the filling before putting the crust on. Very well received by my husband who ate three helpings! Delicious!

Really good! I made with sugar free syrup, splenda and brown sugar twin and it came out great. Added freshly ground flax seed (1/2 cup) which gives a nice nutty flavor. Thanks for a fabulous recipe! I will be making the full version for christmas gifts this year.

Beth's Spicy Oatmeal Raisin Cookies

Absolutely delicious! Did not change a thing other than to soak the raisins for about 10 minutes in warm water before adding them to the recipe. My cookies turned out a bit flat, so perhaps I will stick them in the fridge to firm up the dough next time. Flavor cannot be beat! Highly recommend!

Big Soft Ginger Cookies

These were sooo delicious. I added 1 T of orange juice instead of 1 T water and reduced brown sugar to 3/4 c as others suggested. Used dark molasses and not the light. PERFECT taste although mine came out flat for some reason. Stayed soft, though. Whole batch is GONE two days later! Thank you!

Best Lemonade Ever

This really is the best ever! My one and only lemonade recipe now, because it tastes so much fresher than canned, powdered or frozen varieties. I make it with Splenda instead of sugar. We sometimes add 1 Tbsp of maraschino cherry juice to change it up a bit.

Emily's Famous Apple Pie

Awesome pie! A few changes I made were substituting 1/3 c brown sugar + 1/3 c white sugar for the 2/3 c white sugar for more flavor. Also added a few pats of butter before putting the top crust on. My husband is already on his second piece and raving about this pie! Thanks for a great recipe.

Wonderful applesauce! Harder apples take about 5-7 minutes longer, but it is worth the wait. I added a dash of ground nutmeg and used Splenda instead of sugar. Thanks for great recipe!
