Holiday Chicken Salad

Excellent (but I only give 5 stars when I don't make changes). I seasoned the chicken while cooking. I also used finely chopped walnuts instead of pecans, took out the green pepper, and served it on a bed of romaine leaves with a roll on the side.

Zesty Chicken Meatloaf

Really, it was "the Best". I followed the recipe almost exactly, except I used Italian panko breadcrumbs b/c I didn't have the regular ones on hand. We made it a real tex-mex meal by serving it with sweet corn, chips and salsa. A real kid-pleaser.

American Lasagna

Made this for our neighbor's family & it got rave reviews. Here are our changes: - Dried Italian Herbs (Penzey's) instead of Fresh Basil - One Small Can Diced Tomatoes AND Fresh Diced Tomatoes to equal equivalent canned - Pasta Sauce instead of Tomato Paste - No Boil Lasagna Noodles with Extra Water to compensate - Half Low-Fat Cottage Cheese and Half Ricotta Cheese to equal equivalent Ricotta - Cook 20 minutes uncovered then...- Cook one hour covered with foil to prevent edges from burning Cook AT LEAST 90 minutes

Sirloin Tips and Mushrooms

The sirolin was a little tough. Would've preferred a more tender cut of meat. We used 3-cheese pasta sauce instead of tomato sauce. We served over whole wheat noodles & could not taste the "grain", as the sauce was outstanding.

Chicken and Artichokes

Excellent! I made changes b/c of lack of ingredients; no sherry, no paprika. I also took advice from all the other reviews & after pounding my chicken I seasoned it with Penzey's Florida Seasoned Pepper (has lemon peel and other citric). I sauteed the mushrooms in garlic-infused olive oil and 2 pressed garlic cloves. I also added an additional 3/4 cup chicken broth before baking uncovered. Served over angel hair pasta. YUUMMM!

Jazzed-Up Gravy

We used Trader Joe's boxed organic gravy. This was lighter in color than I'm used to. I did not like it too much, until we mixed it with the gravy we made from Easy Herb Roasted Turkey drippings. THEN it was excellent.

Bread and Celery Stuffing

This is the only stuffing I will be making from now on. However, I couldn't rate it as "the best" b/c we added an extra cup of chicken broth before baking (it just seemed too dry with only one).

Easy Herb Roasted Turkey

The best Thanksgiving turkey I've had in years. it was so moist and flavorful. We put some of the herb mixture under the skin. We cooked it breast side up covered for half the time and breast side down uncovered for half the time. Make sure you use a meat thermometer and it will not be overdone!

AMAZING! I doubled the garlic and instead of using prepared breadcrumbs I made my own with Trader Joe's Whole Wheat Entertainment Crackers. Juicy, tasty & fast.

Excellent! These really impressed a potluck group from St. Louis. After grilling, we cut them in half & soaked in crock pot w/beer, onions, garlic etc. Does not need condiments!

Extremely simple and fast. I used Smuckers Simply Fruit raspberry instead of apricot and it tasted great. Also, used toasted minced dried onions. Who knew you could bake chicken so quickly?

Apricot Glazed Chicken

VERY EASY. I didn't even bother to use the cornstarch. Just continued to simmer until the liquid was reduced. I used 100% fruit spread and the sauce wasn't too sweet for my family.
