Day Before Mashed Potatoes
Delicious!! I love that I can make these ahead of time. The downside of mashed potatoes has always been trying to keep them warm until dinner time. That problem is solved with this yummy recipe!

Black Bean and Corn Quesadillas
These were great! I made the recipe as written and is was easy, delicious, and cheap. I wouldn't go so far as to call it health food, but you could definitely eat worse. I have been trying to find some vegetarian recipes that my meat loving hubby would enjoy. These quesadillas will be a staple at my house from now on!

Roasted Vegetable Lasagna
Excellent! I made this for several meat lovers and they didn't even notice the omission! I am trying to wean myself off meat, and with dishes like this, that is no hardship!
