Jamaican Burgers

I both make and buy a lot of vegetarian burgers, and this recipe is the best by far! I've made these twice now for my family - once on buns with melted cheese, lettuce, sauteed onion and tomato, and once as just patties with our favorite Jerk sauce, sweet peppers, and onions to complete a Caribbean themed meal - both were complete hits! Having small children I substituted the habanero with a jalapeno, and also used a dash of cinnamon instead of the allspice, as I didn't have any on hand. I made the recipe for 8, using two cans of drained and rinsed black beans. The fresh ginger is a must!

Black Bean And Corn Salad II

I served this as a southwestern-style salad, on a bed of leaf lettuce and corn chips. I added a pinch of sugar to the dressing to counter balance the extreme tart of so much lime. I also added 4oz of cubed white-cheddar with chipolte for a bit of something extra. This fed my family of six with leftovers.

Asian Coleslaw

I've made this several times. Quite tasty (obviously or I wouldn't keep making it!). To save time I use the bagged coleslaw mix (the type with all 3 kinds of cabbage). This works perfect with half the dressing. I always replace half the vegetable oil with sesame oil for an even more addictive flavor. Also - it's easy to turn into a quick meal with the addition of some grilled chicken breasts.

Potato Salmon Patties

My family has been enjoying Salmon Patties for years. I tried this recipe one night after realizing I was out of some ingredients for our stand-by Salmon Patty recipe... now there's no going back! Everyone agreed this is the best Salmon Patties they'd ever tried!

Easy Cream of Chicken Rice Soup

With a few adjustments to suit my cooking habits and family's tastes this was easily a five-star recipe. I doubled both the onion and garlic; omited the herb bundle; and added 1 cup of water into the soup, using non-instant rice which I also simply added into the pot THEN simmered for the 25 minutes. Perfect! My husband thought it was the best!

Romaine Rice Tuna Salad

Since I first found this recipe, I've made it about a dozen times. I double the last six ingredients and use fresh spinich instead of the lettuce. It makes a great dinner with a pear salad and good wine.

Uncle Howie's Favorite Artichoke Dip

I love this dip best when baked as suggested, and with twice the garlic..mmmm! it's the best!! I'm addicted to the stuff, and have even taken to making it on the weekends and serving with good quality crackers as part of lunch. It's extremely quick and easy to prepair, and made without the extra garlic, my kids love it, too!
