Cinnamon-Apple Angel Food Cake

This was my first try at making an angel food cake from scratch - and it turned out great. I did use whole-wheat pastry flour for the cake flour, and it was still a very light cake (and no one knew the difference). The glaze was great - I actually made a double batch and drizzled some on vanilla ice cream that I served with the cake.

Mom's Zucchini Bread

Good zucchini bread. I think it could have used even more zucchini in my opinion. I did use half oil/half applesauce and cut down on the sugar to make it a little healthier. It was very good and moist.

Laura's Quick Slow Cooker Turkey Chili

My family loves this chili! It's become a staple at big get-togethers. Like other reviewers suggested, I use one can of tomato soup and 1 can of diced tomatoes. The spices are great. I do change up the beans - mostly depending on what I have on hand. It works well with pinto, black, and kidney (or all three!).

Caramel Chocolate Corn

This popcorn turned out great - better than store-bought. I air popped my popcorn - which cut back on calories a bit. :) It sounds like a lot of steps, but it is REALLY easy to make. I had some problems with the chocolate though - getting it to go on evenly, so on my second batch, I just left the chocolate off and we liked it even better!

Caramel Filled Chocolate Cookies

These were my family's favorites this Christmas. I didn't change a thing - they are a little time consuming, but worth it! I didn't find the dough too difficult to work with as some reviewers mentioned. I also used Rolos.

Refried Beans Without the Refry

These beans are great!!! They are healthy, tasty, and easy to prepare. What's not to love!? I do cut back on the salt by about half, and use about 4 cups of fat-free chicken broth. I use two whole jalapeno peppers - my husband likes the spice - but that doesn't even make them that spicy. This makes a big portion - I usually freeze half of it. They defrost well too.

Roast Pork with Maple and Mustard Glaze

My family loves this recipe. It is simple and elegant. I have made it several times and never had a dry roast. I do baste it about every 20-30 minutes while cooking and it does take longer than 1 hr.

Floating Island Punch

Yummy - this is going to be my new punch receipe. It was so good - I made two batches for a birthday party and still didn't have a drop left. Adults and kids loved it. I made the receipe at written, but can't wait to try it with fruit punch and rasberry sherbet too.

Creamy White Layers

The cake flavor was good, but it fell apart when I went to remove it from my pan. I don't know if I did something wrong or not. I tried to use a shaped pan for my daughter's b-day. I can't judge the topping, because I didn't get that far - it still sounds good....

Ship Island Shrimp Dip

Hot Fudge Ice Cream Bar Dessert

Oh my gosh! This dessert was sinfully good. I wasn't sure when I read it how it would turn out, but I went with all the good reviews and they were right! You don't even realize that it's ice cream sandwhiches. So good. I would think that it would need longer than an hour to freeze nicely - you would want this dish nice and solid.

Mahogany Chicken Wings

These were so good - definitely not spicy though if that's what you're looking for. I marinated them for the whole morning/afternoon, and then baked them on a cookie sheet lined with foil. As suggested by other reviewers, I took the extra marinade - boiled it for a couple minutes, added a little cornstarch dissolved in cold water, and thickened the sauce. When the wings were almost done, I poured the extra sauce on top and let them bake a little longer. Yummy! I did substitute pure maple syrup for the molasses and added a tablespoon of tabasco.

Lemon Blueberry Bread

This bread was great - very moist and slightly tart, which I like to balance the sweets I had already at brunch. I made it with fresh blueberries, but did cut the lemon zest by 1/2. Yummy!
