Chocolate Wave Zucchini Bread

Would definitely make again. Used butter instead of shortening, added 1/3 cup wheat germ. About 1/4 cup more zucchini too, packed down. Looks soo strange when its mixed up b4 U add the dry ingredients. Turned out just fine and cooked in 1hr. GREAT with chocolate nutella spread on it! Didnt have any choc chips to add tho.. so the thinly spread nutella adds YUM! SOO pretty! TIP: Dump out half of the batter into the pan and use the same bowl to mix in the cocoa! Save yourself a dish! :)

Fresh Pineapple Upside Down Cake

Will definitely make again. Used fresh pineapple, 9x9 pan. Added extra 1/4cup of pineapple juice to batter. Whipped eggs just like supposed to. Used cake flour. Used 1/4 cup of organic sugar. Used all 3 egg yolks in the batter. Added 1/2t cinnamon. Everyone loved. Used a pan under the cakepan but didnt even come close to running over. Cooked for 43min total.

The Best Sweet and Sour Meatballs

Added half a can of crushed pineapple to sauce, 1/4cup ketchup,and all the juice from the canned pineapple(1/2cup) with 1cup water. Excellent and will make again! Think I prefer littler meatballs though, so will make half sized ones next time. Ty!

Chicken Pot Pie IX

I didnt have any celery, but added a cup and a half of cubed potato. Also added 3 Tablespoons of Parsley to add some color, and half a red pepper,1cup of corn. I only added the corn/peas/red pepper after the carrots/potato were tender. I used a half a small red onion instead of a yellow one. I used homemade chicken broth. Instead of using pie crust i used biscuit dough from the E-Z Drop recipe on this site with W/W flour as that is all i had. This made too much for one pie plate, so made two. Would make again, but would use some poultry seasoning or other spices.

Simple Maple Syrup

I usually buy the aunt jemima type table syrup for many of my housemates as they prefer it over real maple syrup...This is an excellent substitute and much healthier considering there is no crazy chemicals in it or additives! I use 3/4cup dark brown and 1cup white sugar and real vanilla extract (i dont like artificial flavorings). I let the water come to a boil in the pot, then add the sugars and simmer gently for about 5 mins. I check the consistency with a metal spoon and let it cool to see if it has the appropriate 'feeling' to it before removing it from the heat and adding a 1/4cup of honey and then transferring it to a glass jar. I keep mine in the fridge and have never had a problem with it crystalizing. I warm up the syrup before serving if it has been in the fridge and use it for waffles and pancakes. I will be experimenting with other types of extracts and using it for smoothies/ice cream etc... in the future. Will try with splenda as well. :) VERY cheap to make compared to storebought!

Quinoa and Black Beans

i halved the recipe..and added half a tomato with the corn. i didtn have any cilantro. the can of beans was bigger than what was called for as i had 19oz. i had cumin seed which i ground by hand. will definitely make again and try in soft tacos... VERY yummy.

Quick and Spicy Fish Fillets

used crushed fiberone and organic multigrain flakes.. and milk to put it on. Just made the one serving.used about 1/6 of a cup of each, parmesan and crushed cereal. was very good, will make again. Probably add more spices of some sort... found it kind of plain :)but still good way to use up some cereal and adds vitamins to your meal if you used fortified cereal :)

The Best Rolled Sugar Cookies

very good.. :) taste.. and to roll out.. i creamed the sugar/butter then the eggs/vanilla all in a stand mixer and then did the dry ingredients by hand(didnt have a bowl big enough for the stand mixer). i cut out circles with cutter dipped in icing sugar/flour mixture.. to be decorated later (see pics) i divided the dough into 3 sections, wrapped in plastic and put them in the freezer for about 30 min or so.. then rolled 2 sections out and cooked one night then did the other the next morning. when rolling them out i used a 50/50 mixture of icing sugar/flour so as to not make them too 'floury' as i have read other reviewers say. Also doubled the vanilla. baked at 400F on parchment just until the cookies didnt look 'wet' anymore in the oven.. and they turned out good! had over baked my test cookies so learned from this:) enjoy! will definitely make again. i like it that the dough can be rerolled many times as well.. :) I also made a few (not pictured) that i made little balls with and pushed out with a sugared glass (wet the bottom of the glass with some dough first before dippin in sugar ;) ) so they can be made that way too if in a hurry! Thanks for the recipe!

Maple Salmon

oh my!!! this has got to be one of the yummiest things i've cooked lately! i used organic DARK maple syrup.. natural soy sauce (tamrari) and made it in tin foil.. placed in a glass pie plate... opened during last 5 min or so and broiled it.. also drained off sauce.. reduced it in a small saucepan.. added a tiny bit of cornstarch, whisked it and poured over salmon on warmed dinner plates. Made carrots baked in the oven with a bit of butter and cinnamon and a cranberry wild/brown rice pilaf. :) i'd say this is one my fav meals in a long time.. thank you soooo much. i didnt use garlic salt.. i used 2 cloves of garlic and added a bit of ground sea salt... and freshly ground pepper. :):) sooo good.. will make for company for sure! :)

Baked Spaghetti Corn

i cut the marg in half(used oliveoil becel).Used a 2.5Qt dish. Added shredded carrots at beginning.Used Omega3(flax) spaghettinni. Used light(part skim) OLD cheddar. cooked for about 50 min. Halfway through i added some frozen peas and about 1Tablespoon dried parsley.Thought it needed some green. Used this as a main dish not a side dish and is quite filling. Next time i will add tuna and maybe more cheese. I found it 'sweet'..because of the sugar in the cream corn and the canned corn. (green giant)maybe next time ill drain the corn and add a bit of plain water instead! Will make again!

Old-Fashioned Vegetable Soup

LOVED IT, will make again. I used a can of diced tomatoes instead of the whole peeled. I used 2T of Tamari instead of the soy sauce, as i was afraid, but will put the full 3T in next time. I also added one each of: sweet potato, white potato,1/2 cup of pumpkin puree,extra carrots, used olive oil instead of butter, and veggie broth instead of beef. Was excellent, and my new favorite for veggie soup. I also cooked some small pasta shapes (animals,stars,tubes,letters,etc.) separately and added them to the bowls and ladled the soup on top. with leftovers i kept the pasta separate so it wouldnt be mushy. YUMMM

Baked Pancake Squares

Have made several times.. using whole wheat pastry flour. Have added frozen blueberries...choc chips!! all gets eaten very fast. I like to make them in mini bundt cake pans. :) Then i sprinkle icing sugar on them... sooo yummy! :)

No Roll Pie Crust II

i made this using whole wheat pastry flour and 2t of honey instead of sugar. i used a bit less canola oil because of the liquid in the honey... and cooked it for the recommended time.. it did brown on the upper edges and the rest looked fine. hard to cook to a golden brown when it is already brown when you mix it! anyhow,i do think that it had too much oil or something.. and it could definitely use being more sweet somehow. I used this for a lemon meringue pie. will make again, but using less oil and perhaps some sugar or some sort or splenda. would definitely be better 'as is' for a savory pie rather than sweet.

Indian Saffron Rice

rice turned out perfectly fluffy and a gorgeous color! I used spanish saffron threads, and crushed them in a mortar/pestle to make the required amount. I made this recipe twice for the marrakesh vegetable curry on this website. The second time i made it, i halved the butter for less fat and think it was better the second time around, less greasy/buttery. I also used unsalted butter. If you love buttery rice though, do use the amount listed! Very good recipes, will definitely make again and use the technique for other grains.

Marrakesh Vegetable Curry

i halved the cayenne as im a wimp, but think i will put entire amount called for next time i make it. also i didnt have blanched almonds but would blanch and rub off the skins next time for the recipe. I used the entire amount of spinach called for, but next time i would chop it up instead of leaving the leaves whole, maybe into one inch strips. It just wasnt appetizing after reheating it especially. I would definitely still add it for the vitamins and nice green color! Even a non veggie person in this household ate his entire serving ;) i made this over basmati saffron rice. the curry lover in the family said he'd eat this everyday. Be wary of the curry spice paste, it even stains silicone spatulas fluorescent yellow!

Taste of Home's Pasta Primavera

Very yummy! used multigrain spaghetti, frozen broccoli (added at the last 3 min of cooking the sauce) 1 stalk of celery and 2 med carrots, 2 garlic cloves. Used 3/4 cup 'silk' soymilk (had no milk in house at the time) used campbell's brand condensed cr. of mushroom soup. Added a bit of water, but dont think it would need it next time (was concerned with extra carrot absorbing too much!) May try to make this from scratch and may also add some different veggies next time. Excellent Vegetarian dish! Might even be good with cut up soy hot dogs in it! Will make again!

Ham and Pineapple Dinner

Not bad, but make sure you plan on eating it all in one sitting as it is very starchy textured as a leftover. If I ever make it again I think i'd use less cornstarch and just make it thicker by heating it longer... Did not have any green onions at the time, so used half a small white onion. I added frozen brocolli and green peas, and served this over brown and wild rice cooked with veggie broth. I also used a stone ground dijon mustard. Was a good sweet flavor and the lover of ham and pineapple (separately) in the house loved it :)
