I am a full time stay at home mom with a baby & a pre-schooler. I like to create meals that are fun, quick, easy, HEALTHY for my family...I love to have fun in the kitchen, and hate it when cooking becomes a chore!
My favorite things to cook
I love recipes that LOOK very difficult, but end up being very easy. Or when I try simple recipes that turn out to be a big hit...or easily adaptable so the same idea can be used for fish, chicken, or beef.
My favorite family cooking traditions
We used to make breakfast pizza on Christmas morning. But my husband and I decided we wanted our very own tradition. Now we get bagels, lax, cream cheese, jelly, & deli meat & cheese...it is similar to a holiday breakfast his mother's Dutch family used to have. I also make Dutch Babies.
My cooking triumphs
Winning over my husband with what he calls "rabbit food". If my husband gives me a look of disbelief or even disgust when I tell him what we're having for dinner, or when I mention it's healthy...and then it turns out he REALLY enjoys it...Those are the BEST triumphs for me.
My cooking tragedies
Blackened Cracker Candy. I got a recipe off of an unfamiliar site on the internet...and had to call up a friend in Texas to give me his recipe to re-do it.

Crazy Crust Pizza Dough
This was okay. The baking times seemed to be way off. I checked my crust at 16 minutes and it was already done with the edges getting VERY dark. I sprayed it with some olive oil before I put it back to melt the cheese. I used all the exact measures in the recipes. It did taste a little eggy. I did not have a pizza pan with an edge, so I used a 9x13 pan. It seemed to be a good size. If I do this again, I think I might use a 9 inch round pan...so the crust is thicker. And I might take the suggested of a single egg from other reviews.

Homemade Pancake Mix
I had a small issue that was unrelated to the recipe itself...but I scaled it down to 4 instead of 16 servings. It was only going to be my daughter & myself having pancakes, I didn't want to have a bunch of leftover pancakes or leftover mix. Anyway, the only scaling issue was that it said "1/4" of an egg. HA! So, I made the scaled down version, and used 1 whole egg, and enough milk to make it the right consistency. I did not have any whole wheat flour, so I just used all purpose for both measurements. B/c my daughter is a big CHOCOLATE fan, I substituted 1/4 cup of cocoa powder for 1/4 cup of flour. I was worried I would have rubbery pancakes b/c of scaling it down, but it turned out really well & they were nice & fluffy!!
