Vegetarian Moussaka
This was a very good dish. I have never had it before but was looking for a vegan recipe with eggplant. I substituted the egg for egg-replacer and also used nutritional yeast flakes for that cheesy flavor in the white sauce. The kids had multiple helpings. I also added a touch of cayenne and salt to the white sauce and used roasted tomatoes. Will definitely make again! Thanks!

Quinoa and Black Beans
This was our first time having quinoa. I added 1tsp chili powder along with a can of rotel tomatoes. I also sauteed 2C shredded carrots with the onion and garlic. EXCELLENT!! I also used 1 can black beans like others suggested. I did not put corn as hubby does not like corn mixed in with his food. Will make again!!

World's Best Lasagna
I tripled this recipe and only used beef. It is wonderful. It made 4 lasagnas and froze 3 of them. I reheated at 350 for one hour and it was still delicious!! Thanks!
