Black Bean and Couscous Salad

I too changed it around abit but I think this is one of those recipes you can play with & add what you like. I just got done making it for a camping trip this weekend & it is yummy! I cooked the whole box (3 cups) of couscous & used 4 cups of chicken broth. I added everything else to what I thought would be good...added kalamatas, crumbled feta, diced tomatoes, diced cucumber, finely chopped cilantro & dill & chopped green onion. It is really flavorful & am hoping will be a great addition to our camping meals this weekend.

Easy and Elegant Pork Tenderloin

Excellent dinner tonight! I did alter it some picking ideas from others here. I marinated it for 2 hours in a baggie of olive oil, mustard, crushed garlic, salt & pepper & some sliced green onions. Then I put the breadcrumbs in a large baggie, placed the tenderloin in & shook it up til it was coated. I baked at 425 covered w/ tented foil. Baked 1/2 hr & then removed foil. Baked til it registered 145 degrees. Let it rest for 10 mins & it was very tender & flavorful. My very picky chef father in law was impressed! I served w/ roast potatoes, salad & leftover green bean casserole we had yesterday (Easter). Thanks for the inspiration!

Health Nut Blueberry Muffins

WONDERFUL recipe! I was a little doubtful they were going to be as good as everyone was saying...what w/ all that healthy stuff in them! But I was happily surprised to find them really really good! I made them for snack time at my kids preschool - so they will be getting something healthy & yummy. Thanks for sharing such a great recipe! I will definitely be making these often for me & my kids. FYI I didn't have any bananas so I copied someone else's idea & substituted a plastic container of applesauce.

Rosemary Marinated Lamb Chops

Delicious!!! I used fresh rosemary, thyme & pressed garlic & then grilled them on our BBQ & they were so good! We had guests w/ 2 kids age 13 & they had never tried lamb & they ate a whole chop each & loved it.

Fruit Salad in Seconds

This is a GREAT fruit salad! I make this all the time for dessert & my kids just love it. I just use whatever fruit I have available but our favorites are blackberries, strawberries & nectarines. Just chop into large bite sized pieces & add some yogurt & you're done. I would never have thought a dressing of just yogurt would have been the key to making the best fruit salad!

Tasty Fried Eggplant Balls

We just got done eating these for dinner & could not wait to get online & review these...YUMMY! I had an eggplant I did not know what to do with & it was getting old. Came online & looked up recipes last night & found this - I had all the ingredients already so it was perfect. I did the advance work last night & then put it in the fridge. Rolled them & cooked them tonight. My husband is out late so he didn't get to try them but my 22 month old twins LOVED them, and the big surprise was my son who normally will not allow a veggie to pass his lips! Some things I changed - I used fresh wholewheat breadcrumbs I ground in my food processor - I used about 5 slices. I needed more egg in the dipping procedure & I also added more cheese than it called for - I am going to guess I added almost 3/4 cup. This made them perfect. Thanks so much for this recipe!!!
