Beef Caldo with Spinach

This is a good dish that needs help to be great. After reading the other reviews, I added 1 tsp. cumin and 1/2 tsp. cayanne pepper to bump up the heat. We also are low carb in our house so I used turnips instead of potato. The overall flavor was great but the meat was tough. If I make it again, I will try it in the crock pot.

Lamb Chops with Balsamic Reduction

Great recipe, easy to make. Although I agree you have to use your best balsamic vinegar. I ended up using a speciality fig balsamic that you can find at many specialty shops. The added flavor was awesome.

Carol's Chicken Salad

My family loves this salad. A perfect recipe for left over rotiseire chicken. I substituted red grapes for green and walnuts for water chestnuts and the results were divine.

Crabbies

This recipe is always a big hit with young and old alike. I have to tell my kids not to fill up their plate and save some for the grown ups. As to the recipe itself, not that this is healthy, but I don't use margarine becuase of trans fat, butter has much better flavor, mouthfeel and browns up nicer.

Asiago Sun-Dried Tomato Pasta

I made this dish for 12 people. Be careful when changing servings sizes in the recipe as it yieled enough for 20!! I did up the amount of Asiago and instead of using heavy cream on the finish I used chicken broth which thinned out the sauce, which was too thick. I also used pre-cooked chicken and fresh basil instead of parsley. I was a big hit and we have plenty of leftovers!!
