Di's Delicious Deluxe Deviled Eggs

I don't get all the rave reviews. I found the eggs edible, but there wasn't the depth of flavor I enjoy in the recipes with mustard in the ingredients. My kids loved it, but I won't be making this recipe again.

Marinade for Chicken

This marinade was exceptional! My family raved about the chicken thighs I grilled. Thank goodness I noticed the recipe makes 4 cups - that is a lot! I cut it by 1/3 and that was plenty for the 10 chicken thighs I made.

Shrimp over Cheese Grits

This was an nice quick recipe that everyone in my family. Except my picky 6 yr old. Cheesy grits were very filling and countered the bite of the peppers & onions nicely. Next time, I'll probably use garlic salt & add some cajun seasoning to the shrimp.

Quinoa and Black Beans

Excellent, easy & quick meal. Didn't have fresh cilantro, so I used about a 1/2 tsp of dried cilantro instead. A little hot for my kids, will try 1/8 tsp of cayenne next time. Very tasty and awesome nutrition!

French Toast Stars

These were yummy! I didn't bother making stars, I just used some Italian bread leftover from dinner the night before. I also used dried orange peel, which was okay. I suspect the recipe will be even better with fresh orange zest.

Chantal's New York Cheesecake

My family thoroughly enjoyed this cheesecake! It has a wonderful flavor and I only got one small crack. ;o) I gave it 4 stars because it doesn't have the density that I associate with NY style cheesecake. The flavor is excellent, but it was lighter & fluffier in texture than I expected.

Figs and Toasted Almonds Brie

I've made this twice for company and have received rave reviews. Both times, I have used dried figs. Same quantity, but diced. I also use more water to help hydrate the figs. (Sorry, I eyeballed it - probably about 4 tbsp total). I also didn't bother toasting the almonds. No one seemed to mind!

Hot Chocolate Mix I

This is a nice, chocolatey cocoa mix that isn't too sweet. I usually add a few drops of vanilla extract when making a mug. The food processor step isn't mandatory, but it really helps blend the mix. Hand mixing is fine, but tricky since the milk powder granules are much larger than the cocoa powder.

Cowboy Stew I

Very easy but tasty! Watch the simmer as the creamed corn burns easily. I serve over rice and skip the sour cream. ETA ~ The last time I made this, I got smart and used my slow cooker. It worked great, no burnt corn! I just browned the meat and then threw everything together in the cooker and set it on high. I think I let it cook for about an hour.

Baked Macaroni and Cheese I

Very tasty, the flavor of onions, garlic & bacon are well worth the extra effort. I split the cheese between cheddar & Monterey Jack vs. all cheddar, yum!
