Flan de Coco (Coconut Flan)

My mil (mother-in-law) LOVES flan...she has been known to order two, when we've gone for mexican. She loves this version. I didn't have a lot of luck with the sugar syrup the first couple of times I made it, so...the name of the game is improvisation! Maple syrup or carmel latte syrup. Pour into the bottom of the pan before you pour in the coconut egg mixture! When you invert the flan, if you don't end up with enough glaze, just pour a little more over the top, and everybody's happy! Enjoy!

Fresh Asparagus Soup

This was outstanding! Every time asparagus goes on sale, I buy extra so I can make this soup. I'll snap the stalks, cut off the woody ends, and freeze them till I have enough...can you ever really have enough? I use about 5 bundles of ends...THEN cook them down in the chicken broth with the onion.

Peppy's Pita Bread

ya know, quite frankley, this pita bread wasn't very good. If you're looking for the perfct pita bread recipe, this isn't it. There are several great recipes on allrecipes.com, I just can't remember which one it is.

Caramel Apple Pork Chops

These should be renamed, to "Oooo Can I Have Some More Pork Chops" I tend to cook for my batchlor neighbors, and they love this meal. I usually make the carmel apple stuff in a skillet, and grill the meat. Once the meat is done, I'll pour the sauce and goodies over the top! Definately a family favorite!

Pita Bread

Good bread, not as fluffy as I'd have liked.I may have done something wrong. These freeze well, and thaw nicely. I'll thaw layered in a damp non-fuzzy dish towel in the oven if I need several. For just one or two, I'll thaw them over the gas burner. These cook up nicely and quickly. I roll them out into 8" rounds and bake them 4 at a time on a pizza stone. So far this is the best recipe I've found.

Blue Cheese Beef Tenderloin

Can I just say delish?! I am a blue cheese fanatic, so this hit a big home run with me! Serve with a nice big leafy salad, with a thin blue cheese dressing, or just oil an vinegar. Makes great left-overs too!

Chicken Fried Steak I

This is such a tastey dinner. We usually make it with garlic smashed potatoes and green beans. This is the perfect comfort food meal to eat on a fall night. In fact, I think we'll have it again tonight!

Adobo Sirloin

This is so moist and delicious! I try to not marinate for more than a day (morning to night) otherwise, the chipotle makes the meat a little funky. I used it with Costco Flank Steak. This is great with the Black Bean Couscous Salad! I tend to cook for at least one or two of my batchlor neighbors, and they both agreed this would also make great fajitas the next day.I would definately make this again.

Spinach Pie

This is such a flavorful dish, you wouldn't know you were eating spinach! Rather than going to the extra effort of buying or making a pie crust, we just baked it in a shallow casserole dish. The only change I made, was using ricotta cheese rather than cottage. It's a little on the salty side, so, if watching your salt, cut back a bit on the poultry seasoning. I used the left overs the next day in an omlette and it was amazing! Will definately make again and again and again. This may replace the boring green bean casserole at Thanksgiving!

Black Bean and Couscous Salad

We love this salad! Great with steak, or toss in some cooked and cubed chicken breast. Very flavorful and hearty. Even better the second day as the flavors meld together. Great to take for lunch or make wrap sandwiches out of!

Eggnog Quick Bread

Oh my lordy that was so yummy! I had never had eggnog bread before, and that was amazing! We decided to get a jump start on the holiday baking, and we froze the majority of the batch, it freezed and thaws well. It was moist and rich and delicious! The only thing we added to it was a splash of vanilla, and 2TB of actual Rum...151. Wow! It was great, will definately make again!

Banana Bread IV

This banana bread was so good! The only changes I made, were to add 1/2 tsp cinnamon and about 5 oz chocolate chips! It is a moist delicious oooy gooey treat with a nice tall glass of milk. I will definately make again. It freezes and thaws well, great for holiday baking!
