Broccoli Hamburger Casserole
This recipe came up during an ingredients search. I used fresh broccoli and steamed it for a few minutes. Next time, I won't steam it since it gets so soft during baking. Per others' suggestions, I used half the sour cream and a lot less cheese (even though we're cheese lovers). I spread cooked egg noodles on the bottom of a glass 13x9 pan. I layered broccoli on that, and then the meat mixture. Then topped off with cheese. I baked for 50-minutes. My husband and two picky eater sons all liked it. It's pretty simple and a great way to get veggies and meats into the family.

Fresh Broccoli Salad
I brought this to a potluck and got rave reviews. One lady said that she never eats vegetables but liked this so much that she had a second helping! My only changes were that I used a small yellow onion (chopped) since I didn't have a red onion. Used regular vinegar because I didn't have wine vinegar. Tossed it all together and let it sit in the fridge overnight. Everyone thought that I'd bought the salad from the grocery deli.

Souper Skillet Pasta
Pretty tasty (my 1 and 4-yr-old both ate it!) and just used stuff I had around the house. I only simmered for 15 minutes. Didn't have canned tomatoes so I used a jar of chunky Ragu spaghetti sauce. I also mixed the mozz cheese in as someone suggested. Not the most special meal, but good for a quick and easy meal.
