A hit! Very nice blend of fruit. I used peach preserves which gave it a nice flavor. I would make twice as many tortillas next time.

Easy recipe. Everyone loved them. My suggestion is to use unsalted butter. It's too salty with regular butter. I lined the pan with parchment paper which made it super easy to remove and cut. I will make these again and again!

Dad's Excellent Scallops

Very good. I did not wrap the prosciutto around the edges because it did not want to stay. So I wrapped around the entire scallops.

Turkey Enchiladas

Ok but needs to be jazzed up. Add some spice and other fresh veggies. I used two cans of enchilada sauce and felt that was enough. One can would be to little. Good for leftovers.

Baked Salmon II

I didn't get to marinade for the full amount of time, maybe 15 minutes. But I thought it was flavorful and a compliment to the salmon. Not overpowering for those who like salmon.
