Chicken Tortilla Soup V

Great tasting, easy soup. I made it even easier by using rotisserrie chicken. Also added black beans. Could use a little cilantro too.

Chicken Piccata III

This recipe was fabulous! Will definitely make again - so easy and delicious. I used 1/2 white wine instead of 1/2 of the chicken broth. Added capers and it was excellent. I served it over some linguine. The sauce made enough to flavor the pasta quite well.

Banana Muffins with a Crunch

This recipe was awesome! Very moist and flavorfull. I did fill up the muffin tins more than the recipe stated to make slightly larger muffins - they still baked the same amount of time. I didn't use the coconut flakes and I also didn't use the "banana chips" on top (just don't like the fake flavor of those). I did add 1/4 tsp. of ground ginger for alittle extra zing. My family loved these -- we will be making these again for sure! Enjoy

PHILADELPHIA Antipasto Loaf

This recipe was actually very good. I sliced on the diagonal in 1 inch portions and secured with a frilled toothpick. The downside was this didn't seem to be a big hit with the guests. No one commented on it and there were definitely leftovers. My family enjoyed those though.

Cheesy Shrimp Meltaways

This is a variation of an old recipe of my Mom's and a real crowd pleaser. My Mom's recipe calls for crab instead of shrimp. As another reviewer mentioned it is imperative you use "Kraft Old English" cheese spread in the jar. It is getting harder and harder to find these days.

Mom's Baked Macaroni and Cheese

This is a great recipe. I did add 8 oz. of sour cream as some one suggested and some dried shallots. I also put grated sharp cheddar mixed in with the pasta and sauce and of course still topped it with some more cheese. To finish it off I topped it with some bread crumbs tossed in alittle olive oil. That gave it a nice look and a crunchy crust.

Jordan Marsh Style Blueberry Muffins

I am originally from Florida and so know the fame of the Jordan Marsh blueberry muffins! Wish there was a Jordan Marsh here but these muffins are exactly as I remember them so I'm thrilled I can recreate them anytime I want to. The picture with this recipe does NOT do them justice. They came out of the oven a beautiful golden brown and were light, fluffy and full of blueberries. My family just loved these!
