California Grilled Veggie Sandwich

Super yummy!! I sliced my veggies thin and marinated in oil, balsamic vinegar 2 t seasoned salt and 3 cloves of minced garlic for about 4 hours. My veggies cooked much longer than suggested. My hubby and I both loved this recipe.

Pumpkin Waffles with Apple Cider Syrup

So yummy! The syrup is a bit too sweet. I have made these a few times and cut back on the sugar a bit each time. These waffles cook up perfectly and are so yummy! I don't find them too time consuming but they do dirty a lot of dishes.

Fast and Easy Tofu Lo-Mein

It as OK. I did not find mine too salty as some other reviewers did. I used low sodium soy sauce so maybe that helped. I cooked my tofu about 30 mins. to get the texture I wanted. Easy and cheap to make. I think if I make it again I will make it for lunch. It was very light.

Double Layer Pumpkin Cheesecake

Just not impressed. The pumpkin layer and the cheesecake layer had no real flavor. It was simply bland. I even added extra spices.

Easy Vegetable Pot Pie

Yummy and easy! I added about a half of a package of frozen hash browns. My kids didn't really like it, actually they wouldn't even try it. My husband said it was the best pot pie he had ever tried. I liked it but since my children didn't I won't be making this one again.

Rich and Creamy Tomato Basil Soup

So yummy! I used a 28 oz can of crushed tomatoes and added 4 cloves of garlic with the tomatoes and juice. I forgot to add salt and pepper but it didn't need it. I topped it with some grated parmesean. My husband who doesn't like tomatoes raved about it. This soup will go into my regular rotation. It was super easy, tasty and satisfying!

Mexican Bean Salad

Very easy and VERY yummy! My 5 year old would not touch this, as expected. My 3 year old and picky husband both really like it. It was soupier than I expected it to be. If I were serving it at a party I would strain it before presenting it. Otherwise very pretty, easy, healthy and tasty!!!

Chile Rellenos

Wow...way time consuming. Removing the skins was a HUGE pain. I blistered them on my gas range then put them in a zip lock bag for over 30 minutes. The skins were not easy to peel. The batter part was very messy. The flavors just weren't there. I would suggest using poblanos instead of Anaheim. I will not be making these again!!!

My boys LOVE these. I cut the sugar a bit to our liking. I make 2 batches so I have several to freeze. My 3 year old likes them so much he even eats them frozen!!!

Vanilla Crepes

Very yummy! This was my first time making crepes and I was nervous that they would be too runny, dry, break when I rolled them.... They were perfect! I have made them several times and they turn out great everytime! We have filled them with sliced strawberries, blueberries and bananas.

Onion Soup Pork Chops

Very easy and VERY yummy! I love the flavor of the rice. I cut the water to about 2 1/4 cups. WAY too much water otherwise. Don't overcook or the pork chops become extremely tough.

Great flavor. I added 1/2 c extra eggnog. Otherwise they don't cook through. Mild but yummy flavor! Also set the griddle to a slightly lower temp.

Chorizo Breakfast Burritos

So so so good! Just the way I like them. The proportions were exactly right! I made them for my husband to take to his co workers ( and of course some for me too) everyone enjoyed them!!! Be sure to not get cheap chorizo. I got mine from a great butcher. Get quality and you will taste the difference.

Feta Cheese Turkey Burgers

I LOVED these! Moist, yummy and healthy! Even my husband who HATES olives enjoyed them. I was worried about them falling apart so I added 1/3 c dry bread crumbs and 1 egg. Will make again!
