Seven Layer Taco Dip

Unlike some others, I really like that this recipe uses shredded iceberg instead of a layer of guacamole. The result is a slightly different twist by adding some crisp freshness in with the softer ingredients as oppose to just layers and layers of softness. If you don't want your lettuce to go soft, keep the dip in the fridge prior to serving. And as long is it's served in a controlled environment, it will withstand several hours outside of the fridge. I got RAVE reviews and will indeed be making it again.

Juicy Roasted Chicken

OK - if you are like me, you will look at the ingredients and instructions for this receipe and say to yourself "Jeez people, what is the big deal?" Well- don't do it. I chose this receipe simply because I had a whole chicken, not a lot of time, and needed to cook it. I have NO idea why the combination of these ingredients or this cooking method (I followed it EXACTLY as written, but used real butter) yields such a wonderfully TASTY bird...but it does! If you don't try this, you're missing out. If you do try this, I venture to say that, you will be very pleasantly surprised!

Cheese and Pasta in a Pot

This was really good! But I changed several things and I liked it allot so I'm going to list what I did for 2 reasons: So you can see what I did and I want to remember this when I go to make this again (I will make it again!) Also for those of you with the thought that if you change a receipe up too much, you might as well post your own...well, I've tried that for yrs and have yet to have one of my submissions posted. So, this is my outlet: I used 12 oz. of lrg elbow mac and 4 oz. of a mix (which included Shells, Penne, and Spirals.) I liked the variation that some of the other shapes provided as they all hold the sauce a little differently. I wouldn't do the whole thing in a mix, but this way you ran up on another shape every other bite or so. I didn't use spag sauce, but used 1 can of stewed tomatoes and 2 cans of petite diced tomates and seasoned it myself with basil, oragano, parsley, white pepper and a few red pepper flakes (maybe more garlic than called for). I let that simmer for about 1/2 an hour. I also cooked the meat, onions, and garlic all together then added my tomatoe's, seasoning, and mushrooms. This made for a really tasty sauce, which I think is a big factor in the overall recipe. After I completed the layering process, I topped it off with a little bit of grated - extra sharp - cheddar cheese. The boldness of the cheese, but not overwhelmingly so added a nice finish to the pasta dish. If you don't like cheese - this isn't the dish for you.

Tomato Soup I

Amazing! Double the recipe because it does NOT serve 11. It was the perfect soup for a cold night with grilled havarti and sharp cheddar cheese sandwiches. (The next time I make this, I will double everything except the cream...not because it doesn't taste good, mind you...but because my thighs are in consideration...)

If there were 10 stars, that's what I'd rate THIS recipe. Fantastic! The ONLY changes I made: Added mushrooms and a 28 oz. can of whole peeled italian tomatoes. Yummy!

Very, very good... in fact it's better than you expect it to be. I have been asked to share the recipe twice! Only recommendation I'd make is to be sure you use a high grade cottage cheese.

Grandma's Chicken Noodle Soup

A definite make again dish!!! I used a rotisserie chicken from the grocery store deli. I added some sliced carrots (about 1 ½ cups) and a ½ cup frozen corn with ½ cup frozen green beans. This is the best home-made chicken soup I’ve ever had…even better than the “really home-made” soups that I’ve made. Thank you!!!! Loved it!!!!!

Quick and Easy Vegetable Soup

FANTASTIC!! Don't make the initial mistake that I did when I first read the recipe and assume that it's going to boring. This made the perfect veggie soup and got rave, I mean RAVE, reviews! I did add some frozen green beans and corn, used only beef broth and no water and simmered it for a little longer to let the flavors mesh, but that's all I changed. Very good...You should try it. You will be surprised.
