About this Cook
I am married and have the sweetest little boy. :0)
My favorite things to cook
I love to cook southern food! Being from the south, southern food is comfort food to me. Of course, there is no skimping on the calories here. SO, I can't cook that way too often.
My favorite family cooking traditions
I remember being in the kitchen with my mom and grandmother. All I had to do was walk in the kitchen and ask my grandmother to make something for me and she always would (always from scratch of course). Also, I loved sitting in the kitchen with my mom and talk he ear off while she cooked. Funny thing is...I learned alot while I talked.
My cooking triumphs
I made a Thomas the Train cake for my little boy's birthday party! It looked pretty good!
My cooking tragedies
Too many to tell....

Creolized Stuffed Chicken Breasts
I thought this was good but it was very heavy. My husband L-O-V-E-D it. In fact, he was disappointed that I didn't love it he did. I did leave out the mushrooms because I am not a fan of them. So to compensate, I used a whole pound of cajun sausage. I also used ranch dressing instead of blue cheese.

Easy Baked Tilapia
I am giving it 4 stars because I changed it and I used this as a base. I ommitted the veggies and lemon. I thought that fishy tasting veggies would not taste good. I melted the butter with the garlic and Old Bay seasoning. I poured the butter mixture over the fish. I baked for about 20 minutes. Then, I took about a cup of panko breadcrumbs with some parmesan cheese and spread that on top of the fish. I stuck it back in the oven until the breadcrumbs browned. My family LOVED it. Even my three year old loves it.
